Halloween caramelized pear pie 👻🍐
Pear pie is so underrated! This pie has caramelized pears filling and a flaky chocolate dough crust. So good!
Dough
410g all purpose flour
1 tbsp unsweetened cacao powder (optional, for the color)
65 g granulated sugar
1/2 tsp salt
300g cold butter, cubed
5-6 tbsp ice cold water
Egg wash
Filling
600g pears peeled, cored, and diced into 1 cm pieces
Juice of 1/2 lemon
100g (1/2 cup) brown sugar
1/2 tbsp cinnamon
1/4 tsp nutmeg
1/4 cup water +1 tbsp cornstarch
Instructions for the dough
Cut cold butter into cubes and place it in the freezer until you're ready to use it.
I use a food processor to make the dough, but it can be made by hand.
Add flour, cacao, sugar and salt to the bowl of a food processor. Pulse a few times to combine.
Add cubed butter and pulse a few times until crumbly. Add ice water, 1 Tbsp at a time and blend until the dough comes together.
Do not knead. Divide dough into 2 pieces, wrap them into plastic and refrigerate for at least 30 min.
Instructions for the filling
In a saucepan combine diced pears, water and lemon juice. Cook over medium-high heat, stirring occasionally until softened (10-12 minutes).
In a separate bowl, mix brown sugar, cornstarch and spices. Whisk to combine. Pour over pears, and stir constantly until sauce thickens.
Remove from heat and let cool down completely.
You can reserve the filling in a sealed container for up to 5 days in the fridge.
Assemble
Remove chilled crusts from fridge and roll them out to 5mm. Transfer one dough to pie pan. Use a fork to poke holes into the bottom. Fill with pear filling.
Cut second dough into strips for the lattice crust. You can use an embossed rolling pin to decorate the dough
Refrigerate pie while preheating the oven to 180C degree with a baking tray.
Place the pie over the hot tray and bake for 50 minutes.
Let cool down completely and enjoy!
