Ingredients:
- 1 cup ricotta cheese

☕️ Coffee Cream Cake 🍰
This delightful cake blends the rich flavors of coffee and cream with a moist cocoa base, making it the perfect treat for coffee lovers!

Ingredients:
For the Base:

🥚 5 eggs
🍬 150g sugar
🍮 1 packet of vanilla sugar
💧 3 tsp hot water
☕ 1 tsp instant coffee
🌾 140g flour
🍫 3 tsp cocoa powder
🧁 1 packet of baking powder
For the Filling:

🍰 2 packets of mascarpone
🧴 2 packets of cream
🍮 1 packet of vanilla sugar
🍭 120g powdered sugar
🍃 8 sheets of gelatine
💧 100 ml hot water
☕ 3-4 tsp instant coffee
Instructions:
1️⃣ For the Base:

Dissolve 1 tsp instant coffee in 3 tbsp hot water.
Beat the eggs, dissolved coffee, sugar, vanilla sugar, and a pinch of salt until creamy, which takes about 10 minutes.
Sift together flour, cocoa powder, and baking powder, then carefully fold them into the cream mixture.
Grease and flour a 26 cm (10-inch) baking pan. Pour the batter into the pan, smooth it out, and bake at 180°C (350°F) for 30–35 minutes. Test with a toothpick to ensure it’s done.
2️⃣ For the Filling:

Soak 8 sheets of gelatine in cold water.
Dissolve 100 ml hot water with 3-4 tsp instant coffee and allow it to cool.
In a bowl, combine 2 packets of mascarpone and powdered sugar.
In a separate bowl, whip the 2 packets of cream with vanilla sugar until stiff peaks form.
Once the coffee has cooled, add it to the mascarpone mixture and stir to combine.
Dissolve 2–3 tsp gelatine in a little of the cream, then mix it into the mascarpone cream.
Gently fold the whipped cream into the mascarpone mixture. The cream will be soft.
3️⃣ Assembling the Cake:

Once the base is cooled, cut the sponge horizontally to create two layers.
Spread strawberry jam on the bottom layer.
Place a baking ring around the jammed layer and spread some of the coffee cream on top.
Add the second layer of sponge and spread the remaining coffee cream on top and around the cake.
Chill & Serve:

Refrigerate the cake to allow the filling to set before serving.
Slice and enjoy this heavenly Coffee Cream Cake!

▪️284 g bacon (approx. 14 strips)
▪️227 g elbow macaroni
▪️30 g bacon grease or unsalted butter see notes
▪️16 g all-purpose flour
▪️270 ml milk
▪️1 teaspoon fine sea salt
▪️½ teaspoon black pepper
▪️½ teaspoon garlic powder
▪️⅛ teaspoon ground cayenne pepper
▪️⅛ teaspoon ground nutmeg
▪️227 g sharp cheddar cheese shredded
▪️227 g Monterey Jack cheese shredded

For the Breading:

▪️125 g all-purpose flour
▪️¼ teaspoon fine sea salt
▪️⅛ teaspoon black pepper
▪️⅛ teaspoon onion powder
▪️2 large eggs beaten
▪️180 g seasoned panko breadcrumbs
▪️vegetable oil for frying

Instructions:

To Make the Bacon Mac and Cheese:

Preheat your oven to 400°F (200°C). Line a baking tray with aluminum foil, then place the bacon side-by-side on the tray.

Cook the bacon for 10-15 minutes or until it's reached your desired level of crispiness. Make sure to check on it after about 10 minutes, as some ovens cook faster. Remove the tray from the oven and transfer the bacon with tongs to a paper towel-lined plate.

Chop up the bacon and then set aside 2 tablespoons (30g) of the bacon grease, if using.

Bring a large pot of lightly salted water to a boil. Add the macaroni and cook for 7 minutes or per package directions. Drain the noodles, rinse them with cold water, and set aside.

Add the bacon grease (or butter) to a large saucepan over medium heat. Whisk in the flour to create a roux, cooking until bubbly. Add the milk in a thin stream while whisking. Season with salt, pepper, garlic powder, cayenne pepper, and nutmeg, then bring to a simmer and cook for 2 minutes.

Remove from the heat and mix in the cheese. Once the cheese is melted, fold in the macaroni and chopped bacon until evenly combined. It should look creamy and thick; if it looks a little soupy, continue cooking over medium heat until it thickens up more. (If your noodles are stuck together, just give them another quick rinse under cold water to loosen them up).

Spread the bacon mac and cheese evenly into a 9x9-inch baking pan lined with plastic wrap or parchment paper, cover with plastic wrap, and refrigerate for at least 3 hours, or overnight.

To Make the Mac and Cheese Bites:

Once the mac and cheese is firm and congealed, transfer it from the pan to a cutting board. With a long sharp knife, cut the block into 6 even strips vertically, then cut 6 even strips horizontally so you're left with 36 squares of mac. Alternatively, use a cookie scoop to portion out about 2-3 tablespoons at a time and use your hands to shape into balls, compressing slightly. (Your hands will get messy with this method).

Set up an assembly line. In a small bowl, whisk together the flour, salt, pepper, and onion powder. In a separate small bowl, whisk together the eggs. And in a third small bowl, place your seasoned breadcrumbs.

Dip a macaroni bite into the flour mixture, shake off any excess, then dip it into the egg, let the excess drip off, and then coat it with the panko breadcrumbs. Place the coated macaroni bite on a parchment paper-lined baking sheet and then repeat with the rest of the bites. Transfer the baking sheet to the freezer until they're ready to fry.

Using Airfryer:

Preheat your air fryer on 360 degrees.

Place them into air fryer basket in a single layer, making sure they don’t touch.

Air fry for 8-10 minutes until light and golden on the outside. Remove, serve, and enjoy.

Using stove:

Heat at least 2 inches (5 cm) of oil in a large, heavy-bottomed pot until a thermometer registers 360°F to 370°F (180°C to 190°C).

Working in batches, gently place 3 to 4 mac and cheese bites into the oil at a time and fry for 4-5 minutes per batch, until golden. Remove the bites with tongs, and drain them on a paper towel-lined plate.

Sprinkle with flaky salt, serve hot, & enjoy!

Ingredients:

- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt

Directions:

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

Ingredients

- 2 1/4 cups cake flour
- 1 1/2 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 7 large eggs (separated)
- 3/4 cup cold water
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract (optional)
- 1/2 teaspoon cream of tartar
- Pink food coloring

For the Frosting
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Additional pink food coloring (if desired)

Instructions
Preheat your oven to 325°F (165°C). Do not grease the cake pan.
In a large bowl, sift together the cake flour, sugar, baking powder, and salt.
Make a well in the center of the dry ingredients. Add the vegetable oil, egg yolks, cold water, vanilla extract, and almond extract (if using). Mix until smooth.
In a separate bowl, beat the egg whites and cream of tartar together until stiff peaks form.
Gently fold the egg whites into the batter, being careful not to deflate them.
Add a few drops of pink food coloring to achieve the desired shade and gently fold it into the batter.

some hot water cornbread! I’ve finally mastered the recipe 💛.
1 cup of corn meal mix
1 tsp of salt
1 tsp of sugar
3/4 cup of boiling water
(This will make 4, so I do two rounds to make 8 )
Mix all together and heat any kind of oil (I used extra virgin olive oil) to a medium to high heat. I use a regular dinner spoon and scoop two scoops for each one in the skillet and flip each one after about a minute. They come out perfect and so delicious! Enjoy 🙂
