Chicken Dum Biryani🍗🌿🍚 & Mutton Paya🥩🍵 night✨🤤

Mutton Paya🥩🍵🔥/Goat Trotters Soup(Natural Collagen Soup, Kid-friendly👍)
👉Pressure cook for 20 whistles💨(IP 3mins = 1 cooker whistle):
🔸Goat Trotters/Paya(pre-cleaned, pre-prepped/pre-charred, wash thrice before using)
🔸A little of each of Whole Garam Masala: 3 C’s Cinnamon, Cardamom, Cloves, Shahi Jeera, Cumin, Javitri/Mace, Bay Leaves, Pepper Corns
🔸½ tbsp Ginger Garlic paste, 1 Green Chilli, 1 Dry Red Chilli, Turmeric, Salt, 2 cups water.
👉Strain & Save the broth. Separate the trotters from all masalas as shown to add next.
👉In the same cooker, heat 1 tbsp ghee, add finely chopped curry leaves, onion, tomato, cilantro, mint, cooked trotters & sauté until brown.
👉Add the saved broth and boil on high heat for 5mins, check seasoning, lower heat & simmer for 10mins.
👉Squeeze ½ Lime🍋 after turning off heat.
🍽️Enjoy piping hot with toasted bread/naan to sop up and inhale all that natural collagen goodness your body was craving for!🤤

👉Marinate chicken overnight:
Salt
Turmeric
Red Chilli Powder
Ginger Garlic paste
Shan Biryani Masala
Green Chillies
Cilantro, Mint
Lime Juice
Greek Yogurt
Whole spices: Shahi Jeera, bay leaves, 3 C’s(cinnamon, cardamom, cloves), javitri, star anise
👉Add Fried Onion(thinly sliced, deepfried & removed excess oil)
👉Cook 50% in an enameled cast iron dutch oven/pot with a heavy lid.
👉Cover with 80% cooked basmati rice (water, salt, oil, shahi jeera, cinnamon, cardamom, clove, strain after rice starts dancing on top but still has a bite when chewed)
👉Top with lots of ghee, more fried onion & cilantro+mint
👉Bake covered for 30min at 400F in a pre-heated oven, rest for 15mins before opening lid😶🌫️
