My Customized Thai Papaya Salad: Healthy, Tasty, and Full of Flavor!

Hey there, food lovers! I’ve given the classic Thai papaya salad a fresh twist to fit my own taste. It's a vibrant, healthy dish with just the right balance of sweet, sour, spicy, and savory. Trust me, this is a salad you’ll want to try—perfect for any meal or as a refreshing side dish. Let me know what you think in the comments below!

Ingredients:

• 1/2 Green Papaya – shredded (the base of this dish!)

• 1 Mango – not too ripe, not too sweet, shredded (adds a beautiful fruity twist)

• 1 Apple – shredded or julienned (for a bit of crunch and sweetness)

• 1 Tomato – diced (to bring in some juicy freshness)

• 1 Small Onion – julienned (adds a slight sharpness)

• 1 Small Carrot – shredded or julienned (adds color and crunch)

• 1 Cucumber – shredded or julienned (for a refreshing bite)

• Fresh Cilantro – finely chopped (adds a herbaceous kick)

• Salt – to taste (be mindful, the soy sauce is salty too)

• Agave Nectar or Honey – to taste (for a touch of sweetness; agave is great for low glycemic control!)

• Green Chilies – finely chopped (for that spicy kick!)

• 1 Lemon – fresh juice (brightens everything up)

• Light Soy Sauce – 4 tbsp (the umami base for the dressing)

• Peanuts – crushed, for crunch (a must-have topping!)

How to Make It:

1. Prep the Ingredients: Start by shredding the green papaya and mango. Julienning the apple, onion, carrot, and cucumber adds a nice texture. Diced tomato? Perfect! Throw everything into a large bowl.

2. Season the Veggies & Fruits: Sprinkle in some salt, but be cautious. The soy sauce dressing already has salt, so you want to taste as you go.

3. Make the Dressing: In a small bowl, mix together:

• Fresh lemon juice

• Agave nectar/honey

• Light soy sauce

• Finely chopped cilantro

• Finely chopped green chilies (adjust based on your spice tolerance!)

4. Combine: Pour the dressing over the veggie-fruit mix and toss everything together until well-coated. Feel free to adjust salt or sweetness to your liking.

5. Top with Crunch: Finish it off by adding the crushed peanuts for the delightful crunch that makes the salad irresistible.

6. Enjoy! Serve immediately or chill for a bit to let the flavors marinate!

Just whipped up these delightful ABC muffins using 's recipe! 🧁 The first two pics are the mini versions for my 1-year-old – completely sugar-free and packed with love! ❤️ The third pic is for the rest of us, and I’ve made a few tweaks: added chia seeds for an extra boost of goodness and swapped in almond flour for a lighter, nutty texture. The regular muffins are sweetened with agave syrup instead of refined sugar – still indulgent but a little healthier! 😋 Who’s ready to dig in?

Introducing Bhutanese national dish "Ema Datshi". Ema means Chili and Datshi is Cheese. It is basically chili cheese soup. Traditionally the chili is Hot chili pepper and the cheese used is blue cheese but now a days they use a variety of cheese. I have used cheddar and Swiss cheese (didn't have blue cheese). I have also replaced hot Chili pepper with Jalepenos, it tastes amazing. Deepika Padukon's favorite dish and she brought it to the limelight and I had to try it... after looking through all the viral reels for hours, I finally found a 6 yr old YouTube video by B**g eats which showed step by step easy to follow method (I am biased, it is my favorite YouTube channel for recipes). It goes with rice, bread, tingmo(Tibetan steamed bread).
