Every week, we roast in small batches right here in Pagosa Springs.
We watch every temperature spike, track every second, and pack the beans while they are still fresh.

Had a blast with the 6th grade class from Pagosa Peak Open School!

They got to visit the roastery learning how things get made… we even let them help with a batch.

So does where it’s roasted.
Coffee grown at higher elevations develops more slowly. That can mean denser beans, more sweetness, and clearer flavor.

We start with high quality, high altitude grown, single origin coffee beans… then we roast them at high altitude.
At 7,126 feet, the thinner, drier air changes how heat moves through the roast and how quickly moisture leaves the bean. We adjust the timing and development around that.
The goal is simple: Start with amazing beans and then let the coffee taste like the coffee.
No over-roasting to cover up cheap beans.
No additives or extra flavors
Just a clean, balanced cup with the flavor still there.
