Cheesy Shrimp-Stuffed Salmon 🧀🐟
This surf-and-sizzle dinner idea is an instant family favorite!

📝 Ingredients :

2 salmon fillets (6–8 oz each), skinless

1/2 cup cooked shrimp, chopped

1/4 cup cream cheese, softened

1/4 cup shredded mozzarella cheese

1 tbsp grated Parmesan

1 garlic clove, minced

1 tbsp lemon juice

1 tbsp fresh parsley, chopped

Salt & pepper to taste

1 tbsp olive oil

Optional: lemon wedges, for serving

🍽️ How to Make It :

1️⃣ Prep the Shrimp Filling

In a small bowl, mix chopped shrimp, cream cheese, mozzarella, Parmesan, garlic, lemon juice, parsley, salt, and pepper. This combo delivers cheesy seafood bliss in every bite.

2️⃣ Butterfly the Salmon

Slice each salmon fillet lengthwise to create a pocket—be careful not to cut all the way through. This step is your easy gourmet move for weeknight wow factor.

3️⃣ Stuff & Sear It Right

Gently stuff the cheesy shrimp mixture into the salmon pockets. Heat olive oil in a skillet over medium-high and sear salmon, 3–4 mins per side, for that crispy golden finish.

4️⃣ Broil for Bubbly Top

Transfer salmon to a baking sheet, sprinkle a bit more mozzarella on top, and broil for 2–3 mins until cheese is melted and lightly browned—cheesy crust goals achieved.

5️⃣ Serve It Up Hot

Plate with mashed potatoes or steamed veggies, and drizzle pan juices over top. This dish is pure dinner flex energy.

Garlic Herb Crusted Prime Rib

Ingredients:

- 1 (5 to 6 lb) bone-in beef prime rib roast
- 6 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 1 tablespoon coarse sea salt
- 1 tablespoon freshly ground black pepper
- 3 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon onion powder
- 1 teaspoon smoked paprika

Directions:

1. Remove the prime rib from the refrigerator and let it rest at room temperature for 1 to 2 hours. This helps it cook more evenly.
2. Preheat oven to 450°F (230°C).
3. In a small bowl, mix together the minced garlic, rosemary, thyme, salt, pepper, olive oil, Dijon mustard, onion powder, and smoked paprika until a thick paste forms.
4. Pat the roast dry with paper towels. Rub the herb and garlic mixture generously over the entire surface of the roast.
5. Place the roast bone-side down on a roasting rack in a shallow roasting pan.
6. Roast in the preheated oven for 20 minutes to create a beautiful crust.
7. Reduce the oven temperature to 325°F (165°C) and continue roasting for approximately 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part reads 130°F (54°C) for medium-rare.
8. Once done, remove the roast from the oven and tent it loosely with foil. Let it rest for 20-30 minutes before slicing. This ensures juices redistribute for maximum flavor.
9. Slice against the grain and serve with your favorite sides.

**Steak with Creamy Cajun Shrimp Sauce**

Hello friends! Today, we're whipping up a truly delightful and flavorful dish that's perfect for a special meal or just a cozy night in. This Steak with Creamy Cajun Shrimp Sauce is surprisingly easy to make and absolutely bursting with deliciousness. It's a wonderful way to treat yourself or a loved one!

We've kept this recipe super straightforward and packed with comforting, familiar flavors. No fancy techniques, just pure enjoyment in every bite. Let's get cooking!

**Yields:** 2 servings

**Prep time:** 15 minutes

**Cook time:** 20-25 minutes

**What You'll Need:**

* **For the Steak:**
* * 2 (6-ounce) boneless sirloin or ribeye steaks (about 1 inch thick)
* * 1 tablespoon olive oil
* * Salt and freshly ground black pepper to taste
* **For the Creamy Cajun Shrimp Sauce:**
* * 1 tablespoon unsalted butter
* * 1/2 cup finely chopped yellow onion
* * 2 cloves garlic, minced
* * 1/2 pound medium shrimp, peeled and deveined
* * 1/2 teaspoon Cajun seasoning (look for a mild blend, or adjust to your spice preference)
* * 1/4 teaspoon paprika
* * 1 cup half-and-half (or whole milk for a lighter sauce)
* * 2 tablespoons chopped fresh parsley, for garnish (optional)

**Let's Get Cooking!**

1. **Prepare the Steaks:** Pat your steaks dry with paper towels. This helps them get a nice sear. Season both sides generously with salt and pepper.
2. 2. **Sear the Steaks:** Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is shimmering, carefully place the steaks in the skillet. Sear for 3-4 minutes per side for medium-rare, or longer for your preferred doneness. You can check the temperature with a meat thermometer if you have one (130-135°F for medium-rare, 140-145°F for medium). Once cooked, remove the steaks from the skillet and let them rest on a plate, tented loosely with foil.
