🍗 Sticky Garlic Chicken Bites with Herbed Rice & Veggie Medley 🥔🍄🍅

Ingredients 🛒
For the Chicken:
2 boneless chicken breasts, cut into bite-sized chunks 🍗
2 tbsp soy sauce 🧂
2 tbsp honey 🍯
1 tbsp balsamic vinegar
2 garlic cloves, minced 🧄
1 tsp cornstarch + 1 tbsp water (slurry)
1 tbsp olive oil 🫒
Pinch of chili flakes 🌶️ (optional)
For the Rice:
1 cup jasmine or basmati rice 🍚
2 cups water 💧
1 tbsp fresh parsley, chopped 🌿
Salt to taste 🧂
For the Mushrooms:
1 cup button mushrooms, halved or whole 🍄
1/2 small onion, sliced 🧅
1 tbsp olive oil or butter 🧈
Salt & pepper to taste
For the Potatoes:
2 small yellow potatoes, diced 🥔
1 tbsp olive oil
1/2 tsp smoked paprika
Salt & pepper to taste
For Garnish:
1 small tomato, sliced 🍅
Extra parsley for topping 🌿
Instructions 👨🍳
Cook the rice: Rinse the rice under cold water. Add to a pot with 2 cups water and a pinch of salt. Bring to a boil, then cover and simmer on low for 12–15 minutes. Once cooked, fluff with a fork and mix in chopped parsley.
Prepare the potatoes: Toss diced potatoes with olive oil, paprika, salt, and pepper. Roast in a preheated oven at 200°C (400°F) for 20–25 minutes, turning once, until golden and crisp.
Sauté mushrooms: In a pan, heat olive oil or butter over medium heat. Add mushrooms and onions and sauté for 6–8 minutes until browned and tender. Season with salt and pepper.
Cook the chicken: Heat 1 tbsp oil in a skillet over medium heat. Add chicken pieces and cook for 6–7 minutes until golden and cooked through.
Make the sticky sauce: In a small bowl, mix soy sauce, honey, balsamic vinegar, minced garlic, and chili flakes. Pour over the chicken in the pan. Let it bubble for 2 minutes.
Thicken the sauce: Stir in the cornstarch slurry and cook for another 1–2 minutes until the sauce is glossy and coats the chicken.
Assemble the plate: Serve herbed rice, sticky chicken, roasted potatoes, sautéed mushrooms, and sliced tomato. Garnish with more parsley and enjoy warm.
📝 Notes & Variations
Swap potatoes for sweet potatoes or fries.
Add bell peppers or zucchini for extra veggies.
Chicken thighs can be used for juicier bites.
