Banana Split Fluff Salad.

Ingredients:

1 – 3.4 ounce box instant sugar free banana pudding
1 – 20 ounce can crushed pineapple no added surgar (do not drain)
1 – 8 ounce container Cool Whip (sugar free)
1 cup mini marshmallows (I use max mallow)
1/2 cup finely chopped walnuts + 2 Tablespoons for garnish
1/2 cup mini chocolate chips ( Lilly's )
2 ripe bananas, sliced
1 – 10 ounce jar maraschino cherries, halved
Directions:
Stir together the pudding mix and pineapple until dissolved and thickened. Fold in the Cool Whip.
Gently stir in the marshmallows, nuts, chocolate chips, bananas, and cherries.
Refrigerate at least 1 hour to chill.
Makes about 8 cups
This is more low carb vs lazy keto but also let’s be honest… cherries and bananas aren’t your problem

Spinach Ricotta Stuffed Chicken

_____Ingredients:_____
- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth

_____Directions:_____
1. Preheat your oven to 375°F (190°C).
2. In a bowl, mix together the ricotta cheese, spinach, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
3. Cut a pocket into the side of each chicken breast. Stuff the ricotta mixture evenly into each pocket.
4. Secure the pockets with toothpicks if necessary.
5. Heat olive oil in a large oven-proof skillet over medium-high heat. Add the chicken and sear each side until golden, about 3-4 minutes per side.
6. Pour chicken broth into the skillet around the chicken breasts. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
7. Let the chicken rest for a few minutes before serving.

It’s Pizza Sunday!!
Ingredients

For the crust:2 cups shredded mozzarella2 Tbsp cream cheese1 egg3/4 cup almond flour

Instructions
1. Preheat oven to 425 degrees.
2. Add 2 cups mozzarella and cream cheese to a microwave safe bowl and microwave for 1 minute. Stir to combine and return to microwave until cheese has melted, about 30 more seconds.
3. Stir in the almond flour and egg to combine.
4. Place the dough on a large sheet of parchment paper. Top with a second sheet of parchment.
5. Roll the dough out into a 12 inch diameter circle.
6. Remove the top piece of parchment and transfer the bottom sheet with the dough on it to a pizza pan.
7. Bake for 10 minutes or until crust is lightly golden.
8. For an extra sturdy crust that holds up well, carefully flip the crust over and bake for 3 more minutes.

Top with your choice of sauce, cheese and toppings and bake for another 15-18 minutes (or until cheese is melted)

Pepperoni Pizza Grilled Cheese

Recipe
Ingredients:
4 slices of keto bread
1 cup shredded mozzarella cheese
8 slices of pepperoni
2 tablespoons marinara sauce low carb
2 tablespoons butter, softened
Directions:

Spread butter on one side of each bread slice.
Place two slices, buttered side down, on a skillet over medium heat.
On each slice in the skillet, layer 1/2 cup mozzarella, 4 slices of pepperoni, and 1 tablespoon of marinara sauce.
Top with the remaining bread slices, buttered side up.
Grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
Serve hot and enjoy!

- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, sliced
- 1 cup fresh spinach
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste

1. Preheat oven to 375°F (190°C).
2. Make a deep cut along the side of each chicken breast to create a pocket. Be careful not to cut all the way through.
3. Stuff each chicken breast with equal amounts of roasted red peppers, spinach, and mozzarella cheese.
4. Secure the opening with toothpicks if necessary.
5. In a small bowl, mix together the olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush this mixture over both sides of the chicken breasts.
6. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and no longer pink inside.

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
4 cups cauliflower, chopped
2T plus 2t extra-virgin olive oil
1t kosher salt
1/2t cumin
1/2t paprika
1/4t chili powder
1/4t garlic powder
4 oz 2% Colby-Jack, shredded
4TSalsa, for serving
2T Pickled Jalapeños, for serving

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀:
Preheat oven to 425 degrees F.
To a large baking sheet, add cauliflower. Drizzle with olive oil. Sprinkle all over with salt, cumin, paprika, and chili powder. Toss to coat.
Roast for 35-40 minutes until golden and crispy.
Top with Colby-Jack cheese and return to oven until melted, 5 minutes more.
Garnish with your salsa, guacamole, and pickled jalapeños.

Tzatziki Chicken Salad

Ingredients:

1 medium cucumber, finely grated
¾ cup plain Greek yogurt
2 tablespoons chopped fresh dill
1 tablespoon lemon juice
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon pepper
1 cooked rotisserie chicken
½ red onion, diced
Instructions:

Wrap grated cucumber in a paper towel (or a tea towel) and gently squeeze to remove excess moisture. Add grated cucumber to a bowl along with Greek yogurt, dill, lemon juice, garlic, salt, and pepper. Stir to combine.
Shred rotisserie chicken into small, bite-size pieces and add to your prepared sauce along with red onions. Toss until evenly coated.
Serve with fresh sliced tomato and red onion over a bed of lettuce. Refrigerate leftovers.

Chicken Avocado Ranch Burritos 🥑

Ingredients:

2 cups cooked shredded chicken
1 avocado, diced
1/4 cup homemade low carb ranch dressing
1/4 cup diced tomatoes
1/4 cup diced red onion
1/4 cup chopped fresh cilantro
1 lime, juiced
Salt and pepper, to taste
4 large low carb tortillas
1 cup shredded lettuce
1/2 cup shredded cheddar cheese
Sour cream, for serving
Salsa, for serving

Instructions:

In a mixing bowl, combine the cooked shredded chicken, diced avocado, ranch dressing, diced tomatoes, diced red onion, chopped cilantro, lime juice, salt, and pepper. Mix until well combined.
Warm the flour tortillas in the microwave or on a skillet until soft and pliable.
Divide the chicken avocado ranch mixture evenly among the tortillas, spreading it down the center of each tortilla.
Top each tortilla with shredded lettuce and shredded cheddar cheese.
Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
Serve the Chicken Avocado Ranch Burritos with sour cream and salsa on the side for dipping or drizzling.

Tips:

You can use rotisserie chicken or leftover cooked chicken for this recipe to save time.
Feel free to customize the burritos by adding additional toppings such as black beans, corn, or sliced jalapeños.
