Keeping it simple and sweet today. Nothing pairs better with black tea than freshly made sweet bondas.🤎🤎

Ingredients:

​1 cup wheat flour
​1 cup jaggery water
​A pinch of cardamom powder
​¼ tsp baking soda
​A pinch of salt
​Oil for deep frying

​Instructions:

​In a bowl, add wheat flour, jaggery water, cardamom powder, baking soda, and salt.

​Mix well to form a slightly thick, smooth batter. Rest for 30mins.

​Heat oil in a pan on medium flame.

​Drop small portions of batter into the hot oil.

​Fry until golden brown, flipping both sides evenly.
​Soft, round, fluffy wheat bondas are ready to serve!

There is something so comforting about hard-boiled eggs nestled in a thick, rich, caramelized masala gravy. It is spicy, deeply savory, and pairs perfectly with just about anything,whether you love it with fluffy appam, flaky parotta, or simple steamed rice.🍛🥚Easy Egg Roast.🍛🥚

• ​Boil the eggs and set them aside.

​Cooking Instructions⤵️

1. ​Pop the Spices: Heat oil in a pan, add the mustard seeds, and let them splutter.

2. ​Aromatics: Add the chopped onions along with the crushed ginger, garlic, and green chillies.

3. ​Build the Base: Once the raw smell of the aromatics goes off, add a chopped tomato and bay leaves.

4. ​Spice Mix: After a while, stir in the Kashmiri red chilly powder, a bit of turmeric powder, garam masala, a little bit of pepper powder, and coriander powder.

5. ​Simmer the Masala: Add a little water and heat the mixture until the oil begins to separate and rise to the top.

6. ​Combine and Finish: Add some more water, the scaled (peeled) eggs, and tomato sauce. Boil everything together until you reach your required consistency.

7. ​Rest: Cover the pan and let it sit for 5 minutes before serving.

Ingredients ⤵️

Some recipes aren't just food; they are pure nostalgia. My absolute favorite way to eat sardines. 🌾ചോറും കൂടെ ഈ മീൻ പീരയും ഉണ്ടെങ്കിൽ പിന്നെ വേറെന്താ വേണ്ടത്! 😍

Ingredients⤵️

​Sardines (Cleaned): 250g
​Grated Coconut: 1/2 cup
​Shallots: 4
​Green Chilli: 2
​Garlic: 4 cloves
​Ginger: 1 inch
​Turmeric powder: 1/2 tsp
​Fenugreek powder: 1/4 tsp
​Malabar Tamarind (Kudampuli): 2 or 3 pieces
​Coconut oil: 4 tbsps
​Water: 1.5 tbsps
​Curry leaves: A handful
​Salt: To taste

​Method⤵️

​Prep the Tamarind: Soak the Malabar tamarind pieces in warm water and set them aside.

​Make the Coconut Mixture: Crush the grated coconut, shallots, green chillies, ginger, garlic, some curry leaves, turmeric powder, fenugreek powder, and salt together.

​Combine: In a clay pot (or pan), add your cleaned sardines, the crushed coconut mixture, the soaked tamarind, additional curry leaves, and 1.5 tablespoons of water. Mix everything together very gently so you don't break the fish.

​First Simmer: Drizzle a little bit of the coconut oil over the top. Cover the pot with a lid and cook on low to medium heat for 5 minutes.

​Second Simmer: Open the lid, give it another very gentle mix, close it back up, and let it cook for an additional 5 minutes.

​The Finish: Turn off the flame. Drizzle the remaining coconut oil over the dish and toss in a few fresh curry leaves.

​Rest and Serve: Cover and set the pot aside for 10 minutes before serving to let all the rich flavors meld together. This recipe goes best with Rice.

​Ingredients⤵️

​For the Chicken Marinade:
​Sliced chicken
​2 tsp soy sauce
​Salt
​Kashmiri chilli powder
​Pepper
​Ginger garlic paste
​Cornstarch

​For the Main Dish:
​Chow mein noodles
​Oil (for tossing noodles, frying chicken, and stir-frying)
​Garlic (chopped or minced)
​Onions
​Ginger
​Carrots
​Cabbage
​Bell peppers
​Salt and pepper (to taste)
Spring onions


​For the Sauce:
​Soy sauce
​Ketchup
​Oyster sauce
​Chilli sauce

​Instructions⤵️

​Step 1: Marinate the Chicken
​In a bowl, mix the sliced chicken with 2 tsp soy sauce, salt, Kashmiri chilli powder, pepper, ginger garlic paste, and cornstarch.
​Let it sit and marinate for 10–15 minutes.

​Step 2: Prepare the Noodles
​Cook the chow mein noodles according to the package instructions.
​Drain them and set them aside.
​Toss the noodles with a little bit of oil to prevent them from sticking together.

​Step 3: Cook the Chicken
​Heat oil in a pan.
​Deep fry the chicken pieces or stir-fry the marinated chicken until browned and cooked through (about 3–4 minutes).
​Remove the chicken from the pan and set it aside.

​Step 4: Stir-Fry the Aromatics and Veggies
​In the same pan, add another 1 tbsp of oil.
​Saute the garlic and onions for 30 seconds.
​Add the carrots, cabbage, and bell peppers. Stir-fry for 2–3 minutes until they are slightly tender but still crisp.

​Step 5: Assemble and Serve
​Add the cooked noodles to the pan and toss well so everything combines together.
​Pour in the sauce mixture (soy sauce, ketchup, oyster sauce, and chilli sauce).
​Return the cooked chicken to the pan.
​Toss everything together vigorously until well mixed and heated all the way through.
​Add the spring onions, and adjust the salt and pepper to your taste.

Korean Cream Cheese Garlic Buns🍞

​🥯 Ingredients⤵️

​Base:
​Store-Bought Buns (4–6 pieces depending on size)

​🧄 Garlic Butter Mixture:
​100g melted butter
​​1 whole finely minced garlic
​1 tbsp parsley
​1 tsp sugar

​🍰 Cream Cheese Filling:
​120g cream cheese (softened to room temp)
​Heavy whipping cream
​1½ tbsp condensed milk

​📝 Instructions⤵️
​1. Preheat your oven
​Preheat to 180°C (350°F).

​2. Prepare the Cream Cheese Filling
​In a bowl, combine:
​Cream cheese
​Heavy whipping cream
​Condensed milk
​Mix until smooth and creamy. Transfer to a piping bag (or ziplock bag with the tip cut).

​3. Prepare the Garlic Butter Mixture
​In a separate bowl, mix:
​Melted butter
​Minced garlic
​​Parsley
​Whisk everything together until fully combined.

Cut the Buns

Take your store-bought buns and slice them like a flower (crosswise into 6 or 8 parts), but don’t cut all the way through — leave the bottom intact to hold the filling.

Fill the Buns

Pipe the cream cheese mixture between the cuts.
You can also pipe a little dollop on top for extra creaminess!

Dip & Coat

Dip or spoon the garlic butter mixture over each bun, making sure the entire bread is well coated — especially inside the cuts.

Bake

Bake in the preheated oven for 10–15 minutes or until golden and slightly crisp on the edges.

​Ingredients:
Lays
​2 tbsp butter
​1 tbsp grated garlic
​1 tsp oregano
​1 tsp chilli flakes
​1 tsp Kashmiri red chilli powder
​½ cup fresh cream

​Recipe:
​Heat butter in a pan and add grated garlic, oregano, and chilli flakes.

​Saute on high flame for 30–40 seconds until aromatic.

​Turn off the flame and add Kashmiri red chilli powder. Let it roast slightly in the hot butter for about a minute.

​Meanwhile, whisk the fresh cream well and pour the prepared spicy butter mixture into it.
​Mix everything nicely, and your creamy spicy coating is ready! Gently coat Lays in creamy mixture and dive right in.

​The Base:
​6 thick slices bread
​3 large eggs
​1/2 cup whole milk or half-and-half (for a richer custard)
​1 teaspoon pure vanilla extract
​1/2 teaspoon ground cinnamon
​A tiny pinch of salt
​1-2 tablespoons unsalted butter (for the skillet)

​The Toppings :
​Powdered sugar, for dusting
​Unsalted butter, sliced into pats
​Fresh raspberries
​A sprig of fresh mint
​Real maple syrup

​Steps⬇️

​1. Whisk the Custard
​In a wide, shallow bowl vigorously whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until completely smooth and combined.

​2. Heat the Skillet
​Preheat a large non-stick skillet or griddle over medium heat. Melt about 1 tablespoon of butter, swirling it around to evenly coat the pan.

​3. Dip and Soak
​Dip a slice of the thick-cut bread into the egg mixture. Let it soak for about 10–15 seconds per side so it absorbs the custard without becoming completely soggy. Lift and let any excess drip back into the bowl.

​4. Cook to Golden Perfection
​Place the soaked bread into the hot skillet. Cook for 3 to 4 minutes on the first side until it develops that beautiful, deep golden-brown crust.Flip and cook for another 3 minutes on the other side. Repeat with the remaining slices, adding more butter to the pan as needed.Garnish beautifully and serve hot.
