Mumma Diaries Part 3
As a new mom, I wanted to celebrate hubbyβs birthday in a guilt-free way. ππ So, I made my own version of the viral Dubai Chocolate Cakeπ« β dairy-light, sugar-smart, and breastfeeding-friendly. πΌπͺ
Hereβs my easy recipe π
π₯ Ingredients (Cake Base)
1 cup almond flour π°
2 tbsp cocoa powder π«
2 tbsp oat flour πΎ
1 ripe banana π (mashed)
1 cup dates π΄ (blended into paste)
2 eggs π₯π₯
3 tbsp maple syrup π― (optional)
2 tbsp avocado oil π₯
1 tsp vanilla extract πΈ
1 tsp baking powder β¨
Β½ tsp baking soda β¨
Β½ cup warm almond milk π₯
π« Cake Topping / Layer
β¨ Make two layers and spread a mix of kunafa + pistachio butter inside.
2 tbsp dark chocolate (70%+) π«
1 tsp avocado oil π₯
Pistachio nuts πΏ
Chocolate chips π«
π₯ Method
1οΈβ£ Mix dry ingredients in a bowl.
2οΈβ£ In another bowl, whisk mashed banana, date paste, eggs, oil, maple syrup, vanilla.
3οΈβ£ Combine wet + dry, add almond milk β make smooth batter.
4οΈβ£ Pour into lined baking pan.
5οΈβ£ Bake at 350Β°F (175Β°C) for 25β30 mins.
6οΈβ£ Cool, slice into two layers β spread kunafa + pistachio butter mix.
7οΈβ£ Top with melted dark chocolate + avocado oil, sprinkle nuts + choco chips.
8οΈβ£ Chill 10 mins, then enjoy guilt-free β¨
