This is the kind of breakfast that feels like a little care for yourself. Creamy Greek yogurt mixed with chia, warm cinnamon bananas, and jammy blueberries, balanced, filling, and so comforting. I could eat this everyday!

Ingredients
Chia Base
* 2 tablespoons chia seeds
* ½ cup water
* ½ cup prepared chia mixture
* 1 cup plain Greek yogurt
Toppings
* 1 ripe banana, sliced in half lengthwise
* ½ cup blueberries
* 1 teaspoon honey
* 1 teaspoon butter
* ¼ teaspoon cinnamon
* Fresh strawberries, sliced
* Chopped pecans
Instructions
Prepare the Chia Seeds
In a small bowl, combine chia seeds and water. Stir well and let soak for at least 2 hours or overnight until thick.
Make the Yogurt Base
In a bowl, mix ½ cup of the soaked chia seeds with Greek yogurt until smooth and creamy.
Cook the Banana
Heat butter in a small pan over medium heat. Add banana slices and sprinkle with cinnamon. Cook 1–2 minutes per side until golden and caramelized. Remove and set aside.
Cook the Blueberries
In the same pan, add blueberries and honey. Cook for 2–3 minutes, stirring gently, until the blueberries burst and turn jammy.
Assemble the Bowl
Spoon the chia yogurt mixture into a bowl. Top with warm banana, blueberry compote, fresh strawberries, and pecans.

My boy is 4! I’m not sure where the time is going, but I know I don’t like how fast it’s moving. He reminds me to slow down and breathe a little deeper. I’m so lucky to be his mommy.

Happy Birthday, Koko! 🧁
