Chocolatey Veggie Muffins
These rich, chocolate muffins are so indulgent, yet secretly packed with nutritious veggies like carrots and spinach.
Ingredients:
1 1/4 cups almond flour
1/2 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
2 eggs
1/2 cup maple syrup
1/2 cup grated carrots
1/4 cup spinach puree
1/4 cup milk
1/4 cup dark chocolate chips
Instructions:
Preheat the oven to 350°F.
In a large bowl, whisk dry ingredients, then add wet ingredients.
Stir in veggies and chocolate chips.
Bake for 18-20 minutes and enjoy!
