✅️Maligat na UBE KALAMAY | Sticky Sweet Delicacy!
Set A- Latik
• 2 cups pure cocounut cream

Set B- Kalamay
• 750g glutinous rice flour/ malagkit powder
• 1 &½ cups rice flour
• 4 cups coconut milk
• 380g ube macapuno condensed milk
• ⅓ cup sugar
• ube flavor and color

Methods:
• Pour the coconut cream into the pan.
Boil over medium heat. Stir and when boiling cook until brown & curdles.
Strain and separate the oil. Set aside both.

• Prepare the bilao or molder with clean banana leaf. Grease with coconut oil and set aside.

• Combine the Set B, mix well until fully dissolved.
Pour into the pan, set on medium heat. Keep mixing while cooking. When it's dry, set the heat to low. Continue cooking while stirring slowly.
• Apply coconut oil from latik.
Just keep mixing and cooking until the mixture thickens or sticky. Move quickly to the bilao.
Flatten while it's hot and cool it down.
Slice to desired size or shape. Top with latik.
