Spicy Chicken Tacos with Pico de Gallo
Ingredients:
For the Chicken:
1 lb shredded chicken breast
2 tbsp olive oil
1/2 cup tomato sauce
2 tbsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp cayenne pepper (adjust to taste)
2 cloves garlic, minced
Salt and pepper to taste
For the Pico de Gallo:
2 medium tomatoes, diced
1/4 cup white onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced (optional)
Juice of 1 lime
Salt to taste
For Assembly:
8 small corn tortillas
Fresh cilantro leaves for garnish
Lime wedges
Instructions:
Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
Stir in tomato sauce, chili powder, smoked paprika, cumin, cayenne, salt, and pepper. Cook for 2-3 minutes until fragrant.
Add shredded chicken to the skillet and toss to coat evenly in the sauce. Cook for 5-7 minutes until heated through.
In a bowl, combine diced tomatoes, onion, cilantro, jalapeño, lime juice, and salt. Mix well to make pico de gallo.
Warm tortillas on a dry skillet or grill until slightly charred and pliable.
Assemble tacos by filling tortillas with spicy chicken, topping with pico de gallo and fresh cilantro leaves.
Serve with lime wedges on the side.
