Thor’s Hammer Pie 🥧 🔨
Recipe ⤵️⤵️⤵️

Using my Searwood XL 600 Pellet Grill

Ingredients:
5 lbs Beef Shank
2 oz FYR RED Hot Sauce
2 oz Your Favorite BBQ Rub
1 Cup Apple Juice
4 oz W Sauce
48 oz Your Favorite Stout
3 oz HNY FYR BBQ Sauce
3 Cups Mac & Cheese
1/4 Cup Bacon
2 Diced Jalapeños
2 Egg Yolks
4 Sheets Pie Crust

For the Beef Shank: 🍖
1. Prep the Beef Shank by taking off as much Silver Skin as possible and truss the meat for an even cook
2. Rub with your favorite hot sauce and bbq rub
3. In the SearWood Smoker at 225 degrees spritzing every 30 minutes with Apple Juice and W Sauce blend
4. When meat reaches 170 degrees add to a 1/2 pan, add stout, and cover with foil
5. When meat reaches 200 degrees pull out and rest for 30 minutes
6. Then shred and mix with BBQ sauce

For the Beef Shank Pie: 🥧
1. Using a pie mold add a layer of pie crust
2. Then add Mac & Cheese, Bacon, Shredded Beef, Jalapeños, and top with Pie Crust
3. Add an egg wash to get a golden brown exterior
4. In the SearWood Smoker at 450 degrees for about 40 minutes
5. (Pro tip) Use foil in areas that get golden brown faster than others
6. Rest for 30 minutes and Enjoy!

Surf and Turf Mofongo 💃🏻🦐🥩

For the Plantain Cups
Ingredients:
12 Plantains
4 cups Canola Oil
2 oz. Bacon Bites
2 oz. Honey
1 Tbsp Salt
4 16 oz Plastic Cups

How to:
1. Cut the Plantains into one inch pieces
2. Fry them in Canola Oil at 350 degrees for 5-8 minutes until you see good color
3. Add to a bowl and add Bacon Bites, Honey, Salt, and mash until well incorporated.
4. Roll into 4 equal balls
5. Then add in plastic cup using anything in your kitchen that you can stick in the center to mold a cup
6. Add Cups in the freezer for 1 hour
7. Then peel off the plastic cups and then fry your Plantain Cups at 350 degrees for 5-8 minutes until golden brown

For the Carne Asada
Ingredients:
2-3 lbs Skirt Steak or Flank Steak
2 Oranges
4 Limes
1/2 Onion Sliced
1 Bunch Cilantro, Chopped
1/2 Cup Olive Oil
1/3 Cup Worcestershire sauce
1 Tbsp Garlic Powder
1 Tbsp Chili Powder
1 Tbsp Cumin
1 Tbsp Paprika
1 Tbsp dried oregano
1 Tsp Salt
Cook to your preference

For the Shrimp
Ingredients:
14 Large Shrimp
2 oz your favorite rub
Cook until 145 degrees internal

For the Guacamole
Ingredients:
2 Avocados
2 Tbsp Red Onion
2 Tbsp Tomato
1 Lime
2 Tbsp diced Tomatoes
2 Tbsp diced Jalapeños

For the Corn
Ingredients:
2 Corn Cobbs
3 oz Crema
2 oz Cojita Cheese
1 Tbsp Tajin
1 lime

For the Salsa
Ingredients:
4 Tomatoes
3 Jalapeños
1/4 White Onion
4 Garlic Cloves
1 Lime
1 Tbsp Salt
1 oz Water
2 oz Crème or Sour Cream
1/4 Bunch Cilantro

1. Char Tomatoes, Jalapeños, White Onion, and Garlic
2. Add Charred ingredients to a blender
3. Add Lime, Salt, Water, Creme, and Cilantro and blend until you reach a creamy consistency

Picanha Steak ~ Corn Chimichurri & Potatoes ⛰️

Ingredients:
1 Sirloin Cap Roast
☝🏼AKA Picanha
4 Russet Potatoes
2 Corn Cobbs
2 oz W Sauce
1 oz Omaha Classic Blend
4 oz Tbsp Butter
6 Garlic Cloves
1/2 Bunch Cilantro
1/2 Bunch Parsley
1 Lemon
1 Shallot
1/4 Cup Red Wine Vinegar
3/4 Cup Extra Virgin Olive Oil
1 Tbsp Red Pepper Flakes
1 oz Salt
1 oz Pepper

For the Picanha:
1. Use Worcestershire sauce as a binder
2. Then Salt and Pepper
3. Cook over an open fire for best tasting results and pull when internal temperature reaches 120 degrees for medium rare
4. Rest for 5-10 minutes.
5. Slice and serve

For the Corn Chimichurri:
1. Char two Corn Cobbs over your coals
2. Cut the corn off the Cobb and place in a bowl
3. Then finely chop parsley, cilantro, garlic, and shallot and place in the bowl with the corn
4. Add 1 lemon squeeze, red wine vinegar, olive oil, red pepper flakes, salt, and pepper
5. Mix and serve over Picanha

For the Potatoes:
1. Cut potatoes into cubes
2. In a pan add butter and potatoes and cook on high heat
3. Next add your seasoning
4. When the potatoes start to see some color and crispy on the outside add in your garlic and cook until fragrant

Surf & Turf Pinnapple Boats 🍍🚤
Recipe ⤵️⤵️⤵️

Ingredients:
2 (6 oz) Sirloins
1 lb Large Shrimp
1 Pineapple
1/3 cup Worcestershire
1/3 cup Balsamic Vinaigrette
1/3 cup Olive Oil
1/3 cup Low Sodium Soy Sauce
1/3 cup Brown Sugar
3 tbsp Onion Powder
2 tbsp Chili Powder
3 tbsp Minced Garlic
1 Bunch Green Onion
2 Tomatoes
1 Lime
2 Jalapeños
1/2 Red Onion
1 Bunch Cilantro
4 tbsp Olive Oil
6 tbsp Omaha Classic Seasoning
3 tbsp Sesame Seeds

For the Marinade:
1. Add Worcestershire, Balsamic Vinaigrette, Olive Oil, Soy Sauce, Brown Sugar, Onion Powder, Chili Powder, Garlic, and Green Onions in a ziplock bag and in your protein.
2. For best results marinate overnight

For the Rice:
1. Add one cup of washed rice, two cups of water, and butter in a pan and cook on medium heat
2. Mix rice around after 20 minutes
3. Rice will be fluffy and done in 35-40 minutes

For the Pinnapple Pico:
1. Slice Pineapple in half and core out the center.
2. Use the core of the pineapple and chop fine
3. Add in chopped Tomatoes, Jalapeños, Red Onion, and Cilantro
4. Add Lime Squeeze and Olive Oil
5. Mix until well combined

For the Pineapple Boats:
1. Char the Pineapple Boats
2. Then add in your fluffy white rice
3. Your perfectly cooked sirloin Steak
4. Then your large cooked Shrimp
5. Add in the marinade over top
6. Then the pineapple pico
7. Garnished with sesame seeds and green onion
8. Enjoy!

Cajun Catfish Nuggets 😮‍💨

If you’re looking for a good Cajun Seasoning you need to try .bbq new rub! It was sold out but BACK IN STOCK! It has a nice spice with a smoky kick of Cajun and sweet taste of honey! Been putting it on everything! 💰

If you haven’t tried any sauces do me a favor and try the Sriracha it won’t disappoint! 🌶️

For the Catfish Nuggets:
1 lb Catfish
3/4 Buttermilk
2 Tbsp Melinda’s Sriracha
3 Tbsp TFTI’s Cajun Honey Rub

Cut Catfish into Nuggets and soak in ingredients above for 1-4 hours

For the Dredge:
1 Cup Cornmeal
1/2 Cup Flour
3 Tbsp Cajun Honey Rub
1 Tbsp Garlic Powder
1 Tbsp Paprika
1 Tbsp Salt
1 Tbsp Pepper

Coat Nuggets in dredge and fry at 350 degrees for about 6-8 minutes or until golden brown then place on paper towels or a wire rack and finish with a light coating of more Cajun Rub

For the Remoulade Sauce:
1/2 Cup Mayo
1 Tbsp Dijon
2 Tsp Horseradish
1 Tbsp Cajun Seasoning
2 Tbsp Relish
1 Tbsp Melinda’s Sriracha
1 Lemon

Add ingredients in a bowl and mix well it’s that easy!

Bacon Chicken Ranch Tortilla Kebabs 😮‍💨

Ive been trying to eat healthier which is why I used a low carb tortilla and chicken for this recipe! Also used Ranch which is made with 100% pure avocado oil!

Recipe makes 4 Kebabs:
2 Lbs Ground Chicken
8 oz Bacon
1/4 Cup Chosen Foods Ranch
Chosen Foods Avocado Oil Spray
7 Large Low Carb Flour Tortillas
1 Red Bell Pepper
1/4 Red Onion
1/3 Cup Chopped Parsley
1 Jalapeno
2 Tbsp Sumac
2 Tbsp Paprika
1 Tbsp Cumin
1 Tbsp Garlic Powder
1 Tbsp Oregano
1 Tbsp Pepper
1 Tbsp Salt
1/4 Cup Garlic Butter

How to:
1. In a bowl add Chicken, chopped bell pepper, onions, parsley, jalapeño, seasoning and mix well
2. Slice the ends off the tortilla to make it square
3. Add a thin layer of beef to 6 tortillas
4. Top with Tortilla to make it easier to cut
5. Cut in half, then cut the two pieces in half
6. Flip on their side to make the skewer and then cut again
7. Use Chosen Foods Avocado Oil Spray to spray grill or pan and sear on high heat (This oil can take up to 500 degrees of heat) and this will help the kebab not stick to your cooking surface
8. Top Kebabs with Bacon and Chosen Foods Ranch

Lasagna Soup 😮‍💨

Date Night Series Episode 121

Makes 4 Servings
Ingredients:
1 lb Organic Grass Fed Beef
2 Tbsp Butter
1 Small Onion
4 Garlic Cloves
1 Tbsp Italian Seasoning
1 Tbsp Garlic Powder
1 Tbsp Salt
1 Tbsp Pepper
2 Tbsp Tomato Paste
24 oz Marinara
32 oz Beef Broth
10 Lasagna Strips
1/4 Cup Heavy Cream
1/4 Cup Mozzarella Cheese
1/4 Cup Parmesan Cheese
1/4 Cup Chopped Parsley

How to:
1. In a Pot sauté onions and garlic with butter until fragrant
2. Then add Ground Beef and seasoning to cook down
3. Add tomato paste, marinara, and beef broth
4. Crack Lasagna into pieces and add to the pot
5. Simmer until al dente
6. Add Heavy Cream, Mozzarella, Parmesan, and Parsley
7. Garnish with Basil, Red Pepper Flakes, and Parmesan

Marry Me Steak Bites 💍

This dinner is incredible! Using Sriracha instead of chili flakes is the move! If you’re making the Mash Potatoes make that first since it takes about 25-30 min and you can keep warm while making the Steak & Sauce 👊🏼

Recipe 🥩
1 lb Steak of your Choice
4 Tbsp Butter
Salt & Pepper

How to: Cut Steak into 1x1 inch cubes, season, sear a minute on all sides, and baste with butter

Marry Me Sauce Ingredients: 💍
1 Shallot
4 Garlic Cloves
3 oz Sun Dried Tomatoes
1 Tbsp Sun Dried Tomato Oil
1 Tbsp Tomato Paste
1/4 Cup Heavy Cream
1 Lemon
1 Tbsp Garlic Powder
1 Tbsp Oregano
1 Tbsp Paprika
1/4 Cup Parmesan
1 Tbsp Melinda’s Sriracha

How to: In the same pan you used for the steak use the butter to sauté the shallots and garlic until fragrant. Then add in all the ingredients above whisking as you go.

Garlic Mashed Potato Ingredients: 🥔
6 Yukon Gold Potatoes
1 Garlic Bulb
1 Cup Milk
Salt & Pepper

How to: Add Potatoes and Garlic in a Pot with salt and boil for 15-20 minutes or until fork tender. Mash the potatoes adding in milk, garlic, salt, and pepper. Serve with butter

Viral Tortilla Beef Kebabs 😮‍💨

This one is a must try! I cooked this on my Kettle with Charcoal for that flavor we all love over fire! 🔥

Recipe makes 4 Kebabs:
2 Lbs Ground Beef
6 Large Flour Tortillas
1 Red Bell Pepper
1/4 Red Onion
1/3 Cup Chopped Parsley
1 Jalapeno
4 Garlic Cloves
2 Tbsp Sumac
2 Tbsp Paprika
1 Tbsp Cumin
1 Tbsp Garlic Powder
1 Tbsp Oregano
1 Tbsp Pepper
1 Tbsp Salt
1/4 Cup Parsley Garlic Butter

How to:
1. In a bowl add Beef, chopped bell pepper, onions, garlic, parsley, jalapeño, seasoning and mix well
2. Slice the ends off the tortilla to make it square
3. Add a thin layer of beef to 6 tortillas
4. Cut in 4 then flip to make the skewer and then cut again
5. Sear on each side and paint on Parsley Garlic Butter to help crisp the tortilla

Jalapeño Cilantro Cream Sauce:
Ingredients:
1 Cup Yogurt
1 Jalapeño
4 Garlic Cloves
1 Bunch Cilantro
1 Lemon
Salt to Taste

How to:
1. Add all ingredients in a blender and blend until smooth
2. Add Vinegar or Water to thin out to desired texture

For the Wings:
2 lbs Chicken Wings
2 Tbsp Avocado Oil
8 Tbsp Reaper Rub
3 Tbsp Cornstarch

For the Creamy Cajun Garlic Sauce:
8 Tbsp Unsalted Butter
1/2 Cup Minced Garlic
1 Tbsp Garlic Powder
1 Tbsp Italian Seasoning
1 Tbsp Paprika
1 Tbsp Cayenne Pepper
1 Tbsp Onion Powder
1 Tbsp Coarse Ground Black Pepper
1 Tbsp Salt
1 Tbsp Red Pepper Flakes
2 Tbsp Sriracha
1 Cup Heavy Cream

Bears in a Blanket 😮‍💨

I’m using the Limited Edition Tailgating Blend Pellets! When everyone brings wings and ribs to the tailgate gathering, show up with dessert. This blend adds a sweet, smoky flavor to these lil Bears in a Blanket! Available in store and online at Lowe’s everywhere!

Recipe makes 9:
8 oz Original Cresent Rolls
1 1/2 Bars Hershey Chocolate
9 Teddy Graham Crackers
1 Banana
3 oz Reese’s Peanut Butter
4 Tbsp Butter
1 oz Sugar & Cinnamon

How to:
1. Roll out the Cresent Roll and cut into 9 pieces
2. Add the Chocolate, Banana, Teddy Graham, Peanut Butter, and fold over the Cresent Roll
3. Use a fork to crimp the edges and brush on butter and top with cinnamon and sugar
4. In the Oven or Smoker at 400 degrees F for about 15 minutes
5. Top with Caramel and enjoy!

Buffalo Chicken Onion Rings 😮‍💨

Beer Battered Onion Rings are the only way to have a rich malty depth of flavor and using Non-Alcoholic Just the Haze IPA that sent these Buffalo Chicken Onion Rings Over the TOP! 😮‍💨

Recipe Makes 12
Ingredient List:
1 Lb Chicken
12 oz Mozzarella
3 oz Buffalo Sauce
3 Large Onions

Beer Batter List:
1 1/2 cup Flour
16 ounces Non-Alcoholic Just the Haze IPA
3 Tbsp Baking Powder (double acting)
1/3 cup Paprika
1 Tbsp Onion Powder
1 Tbsp Garlic Powder
2 Tsp Salt
2 Tsp Pepper

How to:
1. In a bowl add Chopped Chicken, Shredded Mozzarella, Buffalo Sauce, and give that a mix
2. Cut ends off the onion and cut in half to get some thick rings
3. Use a big ring and small and fill with the mixture
4. Place in the freezer for about an hour
5. Add all Beer Batter ingredients in a bowl and mix well
6. Dip the Onion Rings in the Batter and fry at 350 F degrees for about 6-8 min or until golden brown
