Crockpot Fiesta Ranch Chicken Soup 🥣

Ingredients

* 2 boneless, skinless chicken breasts
* 1 can black beans, drained and rinsed
* 1 can pinto beans, drained and rinsed
* 1 can corn, drained
* 1 can diced tomatoes
* 1 can Rotel diced tomatoes & green chiles
* 1 packet ranch seasoning
* 1 packet taco seasoning
* 2 cups chicken broth
* 1½ cups shredded cheddar cheese
* 8 oz cream cheese, softened
* Salt and pepper to taste

For topping: tortilla chips or Fritos, sour cream, shredded cheese, sliced jalapeños, and green onions.

Instructions

1. Place the chicken breasts in the bottom of your slow cooker.
2. Add the black beans, pinto beans, corn, diced tomatoes, and Rotel.
3. Sprinkle the ranch and taco seasoning over everything, then pour in the chicken broth.
4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is cooked through and easily shreds.
5. Remove the chicken, shred it with two forks, and return it to the slow cooker.
6. Add the cream cheese and shredded cheddar. Stir until completely melted and the soup is creamy.
7. Let cook for another 15–20 minutes until everything is hot and well combined.
8. Spoon into bowls and top with crushed tortilla chips, sour cream, jalapeños, green onions, and extra cheddar.

Ingredients

* 4 boneless, skinless chicken breasts
* 1 cup **Lay’s potato chips**, finely crushed
* 8 oz chive & onion cream cheese, softened
* 4–6 slices bacon, cooked and crumbled
* 1 cup shredded mozzarella cheese
* 1 egg
* 1 can (10 oz) cream of bacon soup
* ½ tsp garlic powder
* ½ tsp onion powder
* Salt and black pepper, to taste
* 1 tbsp olive oil or melted butter

Instructions

1. **Preheat oven** to 375°F (190°C). Lightly grease a baking dish.
2. **Prepare the filling:** Mix softened cream cheese, crumbled bacon, mozzarella, garlic powder, and onion powder.
3. **Prepare chicken:** Slice a pocket into each chicken breast, being careful not to cut all the way through. Stuff each with the bacon-chive cream cheese mixture.
4. **Make the coating:** Crush the **Lay’s chips** into fine crumbs and place them in a shallow bowl.
5. Beat the egg in another bowl. Brush or dip each stuffed chicken breast in the egg, then press firmly into the crushed Lay’s chips until completely coated.

Walking Tacos - all the taco fillings served right inside a Doritos bag. Perfect for parties, camping, or when you don’t want dishes.

Ingredients
Makes 6 walking tacos

For the taco meat:
- 1 lb ground beef
- 1 packet taco seasoning mix - or 2 tbsp homemade
- ⅔ cup water

Toppings:
- 6 small bags Doritos Nacho Cheese - snack size bags work best
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup sour cream
- ½ cup salsa

Instructions

1. Cook the meat
Brown ground beef in a skillet over medium-high heat until no pink remains, about 5-7 min. Drain excess fat.
Add taco seasoning and water. Simmer 3-5 min until thickened. Keep it warm.

2. Prep the bags
Gently crush the Doritos in each bag a few times - just enough to break them up without turning them to dust.
Roll the top of the bag down slightly so it stands up and’s easy to fill.

3. Assemble
Spoon 2-3 tbsp of taco meat into each bag over the chips.
Top with cheese, lettuce, tomatoes, a dollop of sour cream, and salsa. Layer however you like.

4. Eat
Grab a fork or spoon and eat straight from the bag. No plates needed.

Tips
- Don’t over-crush the chips: You want chunks for crunch, not crumbs.
- Keep meat warm: Use a slow cooker on “warm” if serving a crowd.
- Swap the protein: Ground turkey, chicken, or black beans work too.

Ingredients:

* 3–4 lb beef chuck roast
* 1 large onion, sliced
* 3 cloves garlic, minced
* 2 cups beef broth
* 1 can beef consommé
* 2 tbsp soy sauce
* 1 tsp black pepper
* 1 tsp garlic powder
* ½ tsp onion powder
* 6 hoagie rolls
* 6–12 slices provolone cheese
* 1 tbsp butter, optional for toasting the rolls

Instructions:

1. Place the sliced onion and minced garlic in the bottom of the crockpot.
2. Season the chuck roast with black pepper, garlic powder, and onion powder, then place it on top of the onions.
3. Pour in the beef broth, beef consommé, and soy sauce around the roast.
4. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is very tender and easily pulls apart with a fork.
5. Remove the roast and shred it with two forks, discarding any large pieces of fat.
6. Return the shredded beef to the crockpot and stir it into the onions and savory cooking juices.
7. Split the hoagie rolls and lightly toast them with butter if desired.
8. Pile the shredded beef and onions generously onto each roll.
9. Top with provolone cheese and place under the broiler for 1–2 minutes, just until the cheese is melted and bubbly.
10. Strain or ladle some of the warm cooking broth into small bowls and serve alongside the sandwiches for dipping.
