π Sinigang na Baboy (Pork Sinigang) π½οΈ
π§ Ingredients:
1 kg pork (preferably belly or ribs), cut into chunks
1 medium onion, quartered
1-2 medium tomatoes, quartered
1 pack tamarind soup mix (e.g., Knorr or Mama Sita's) or fresh tamarind (boiled and strained)
1 tbsp fish sauce (patis)
Salt and pepper to taste
6-10 cups water
Optional Veggies (use whatβs available):
1 cup daikon radish (labanos), sliced
1 cup sitaw (string beans), cut into 2β3 inch lengths
1 cup kangkong (water spinach), leaves and tender stalks
1 eggplant, sliced
1 long green chili (siling pangsigang)

π² Instructions:
1. Boil the pork:
In a large pot, add pork and water. Bring to a boil. Skim off scum/foam.
2. Add aromatics:
Add onions and tomatoes. Simmer on medium heat for 45 minutes to 1 hour, or until pork is tender.
3. Add vegetables:
Start with radish and eggplant. Cook for 5β7 minutes. Then add sitaw and chili.
4. Flavor the soup:
Add the tamarind mix (or fresh tamarind juice), fish sauce, salt, and pepper. Adjust to your preferred sourness and saltiness.
5. Add leafy greens:
Add kangkong last. Let it wilt for 1β2 minutes.
6. Serve hot:
Best served with steamed rice. π
