Watermelon themed smash cake and cupcakes for a very sweet little girl who is ONE IN A MELON! 🍉💚

I managed to freeze the assembled and decorated cake and all 72 cupcakes before our kitchen renovation started. I made the cake topper with my Cricut too! Swipe to the end for pics of our current kitchen space (very open concept at the moment lol). 😮‍💨 I’m so excited for our kitchen makeover!

Today kicked off demolition of our home kitchen and the start of an exciting remodel (by the wonderful Barden Home Builders 🛠️)! Our kitchen will be off limits for ~2.5 months, so it was *critically* important to prepare by baking my famous GF CHOCOLATE CHIP PUMPKIN MINI LOAVES for hubby in advance for hunting season!🌲😋

On a side note, I am sooooo excited for double ovens and floor to ceiling baking storage! 😍

Two of the most meaningful cakes I’ve ever made, for precious twin daughters of our close friends. 🥹 Olivia reached a big milestone with cancer treatment, and Madison has been her biggest cheerleader every step of the way. Olivia loves pink-frosted donuts, so I turned her favorite treat into a giant cake and made a matching chocolate-frosted donut cake for super sister Madison. 🍩 The girls loved them! It was such a privilege to celebrate Olivia’s sweet victory—she is the strongest little girl and an inspiration to us all. 💕

These naturally gluten-free cookies are perfect for summer because they pack all of the flavor without needing to turn the oven on. They disappeared at work so quickly! 😄

Happy birthday USA! 🇺🇸

I normally bake everything from scratch, but I was really impressed with these brownies I made with the Extra White Gold Gluten Free mix I won in a giveaway! I topped the brownies with homemade whipped cream cheese frosting and decorated with strawberries and blueberries to look like an American flag. These were a big hit at our 4th of July BBQ! ❤️🤍💙

ROLLING into Father’s Day with a twist on a classic: GF Black Forest Swiss Roll 🌀

This was a fun request from Alex Links to try something new for Father’s Day this year: chocolate sponge cake with cherry whipped cream rolled up and topped with more whipped cream, dark chocolate shavings, and fresh cherries. Yum! 🍒😍

This week, Mikaela’s test kitchen featured a classic: CHOCOLATE CHIP COOKIES 🍪

In pursuit of the most delicious high altitude gluten-free chocolate chip cookie, I made two different recipes and asked coworkers to vote on their favorite overall cookie in terms of taste and texture. Recipe A was the winner by a narrow margin, so I will fine-tune that recipe in my next round of testing by adjusting ingredients, bake temperature, bake time, etc. My fellow treat-loving engineers at work are really enjoying this fun experiment!

This Cars / Tow Mater monster truck cake for our son’s 5th birthday was almost 100% designed by him! He drew out exactly what he wanted (including a tunnel through the cake) and I tried to bring his vision to life. The GF chocolate cake layers with vanilla buttercream were delicious, and the chocolate tires and cookies & crème fudge rocks were all edible too. With that smile, I’d say it was a big hit! 🎉❤️ Oh and I made the cute cake topper and road signs using my machine too!
