Biryani using left-over kurma (any curry)

Ingredients:
For cooking rice-
1.5 cups basmati rice, rinsed
1 tsp cumin seeds
1 bay leaf
1 tsp oil
3 cups water

Saffron Milk-
1/4 cup warm milk
8-10 saffron strands

Fried Onion(air-fried @ 375F for 5-6 mins)-
1 medium onion, sliced
1 tsp oil

For Biryani-
1 tbsp oil
8-10 cashews
15-20 raisins
1 tsp cumin seeds
3 cup leftover kurma
1 tbsp coriander leaves

Method:
1. Add all the ingredients of cooking rice in a pot & cook until all water is evaporated.
2. In a cup take warm milk, add saffron stands and set aside to soak.
3. Add thinly sliced onions to air-fryer basked, spray oil and air-fry for 5-6 mins @ 375F tossing mid-way.
4. Heat oil in a wok/heavy bottom pot, roast cashews & raisins and set aside.
5. To the remaining oil, add cumin seeds and let it sizzle.
6. To this add left over kurma (any curry), bring it to boil. Top it with layer of cooked rice, fried onions, roasted cashews, raisins, saffron milk, coriander leaves. Cover this and cook on low heat for 15-20 mins or until all liquid is evaporated. Serve this hot with choice of raita.

Brussel Sprouts Stir Fry

Ingredients:
1 tbsp oil
1/2 tsp mustard seeds
1/2 tsp urad dal
1/2 tsp chana dal
2 dry red chili
1/2 tsp turmeric powder
1 tsp salt
1 small onion, chopped
3 cups brussel sprouts, chopped
1/4 cup water

Method:
1. In a heavy bottom wok/pot, add oil thru chana dal and let it pop. Then add chili thru onion and saute for 3-4 mins.
2. To this add brussels sprout, water, close & cook for 7-8 mins or until translucent. Serve with roti/rice.
