Last night I had plans for homemade donair meat but I saw a turkey breast for cheap so I decided to smoke that too. Smoked over a snake with hickory for 3hrs at 225° until 162° internal for both.
I was a little concerned the turkey would be dry doing low and slow but I guess the packaged liquid injection was a saving grace because it came out perfect for lunch meat.
The donair meat was half lamb, half veal with a pretty stellar mix of seasonings.
Very happy with the results and looking forward to the donairs tonight after I make some pita bread. 😋

Nothing new or (potentially) interesting here but finally picked up the swift St Louis ribs and gave them a go today.
Did 2.5-2-1 on my Weber Kettle, used the snaked method, ran about 150c for the first couple of hours till I dropped the top layer of coals and got down to 120c for the rest.
These were probably a little more melt in the mouth than I like but my wife and son loved em, could pull the bone out easily etc
