Italian Sliders are an easy and delicious dinner or appetizer for all of the Holiday gatherings!

INGREDIENTS
1 pack of King’s Hawaiian Rolls
Provolone cheese
Pepperoni
Salami
Ham
1/2 cup banana pepper rings
1/2 a red onion, sliced
Mozzarella cheese
4 TBSP of butter
1/2 each tsp Italian season and garlic powder
Parmesan cheese
Marinara (for dipping)

INSTRUCTIONS
Slice King’s Hawaiian Rolls in half and place the bottom of the rolls on a greased sheet pan.

Layer provolone cheese, pepperoni, salami, and ham. You can really use as much or as little meat as you’d like on these. Add about 1/2 cup of banana pepper rings and half of a sliced red onion. Top with mozzarella cheese and place the tops of the rolls on the sliders.

Mix together 4 tbsp of melted butter with 1/2 tsp each of Italian seasoning and garlic powder. Brush the butter mixture all over the tops of the rolls.

Bake the sliders in the oven at 350 degrees F for 10-15 minutes, or until the cheese is melted.

Top the sliders with Parmesan cheese and dip in marinara. Enjoy!

Cheesy Broccoli, Chicken, and Rice Skillet is an easy one pan meal!

INGREDIENTS
1 lb chicken breast
2 tbsp butter
1 chopped onion chopped
1/2 tsp each of salt, pepper, and paprika
1 tbsp ranch seasoning
1 tbsp minced garlic
2 cups of chicken broth
1 cup white long grain rice, rinsed
2 cups chopped broccoli
1 1/2 cups shredded Colby Jack cheese

INSTRUCTIONS
Cut chicken into small pieces. Roughly chop broccoli into smaller pieces (just be careful not to chop too small or it will completely fall apart while cooking).

Add butter to a skillet over medium-high heat. Add the chicken and spread out evenly in pan. Season with salt, pepper, paprika, and ranch seasoning.

Once chicken is almost cooked through add chopped onions and minced garlic. Add the rice, broccoli, and chicken broth. Bring to a boil, reduce heat to medium-low, and cover with a lid.

Let cook covered for about 15 minutes or until rice is cooked. Add about a cup of shredded cheddar cheese and stir. Top with more cheese and cover with the lid to let the cheese melt or pop it in the oven under the broiler for just a few minutes. Enjoy! Let me know if you try it out!

Sausage Pancake Bites are an easy breakfast for a holiday morning!

INGREDIENTS
2 cups of Pioneer Original Baking Mix
1 1/2 cups of milk
2 eggs
12 precooked breakfast sausage links
1/2 cup maple syrup

INSTRUCTIONS
Mix Pioneer baking mix with milk and eggs to make pancakes according to the directions on the box. Add maple syrup and stir well.

Cut each sausage link into 4 pieces. Fill pancake mix in mini muffin pans only filling about half full. Place a piece of sausage in each one.

Bake at 400 degrees for 12-15 minutes.

This made 48 mini pancake muffins. Dip in more syrup and enjoy! Let me know if you try it out!

Cheesy Baked Rigatoni is an easy pasta dish the whole family loves!

INGREDIENTS
16 oz rigatoni pasta
1 lb ground beef
1 chopped onion
1/2 tsp each salt and pepper
1 tsp each garlic powder, paprika, Italian seasoning
1/4 tsp red pepper flakes
1 tbsp minced garlic
2 (24 oz) jars marinara
1/2 cup heavy cream
1 1/2 cups ricotta cheese
8 oz shredded mozzarella cheese
Dried parsley
Parmesan cheese

INSTRUCTIONS
Preheat the oven to 375 degrees F.

Heat a pot of water over high heat and boil 16 oz of pasta following the directions on the package. I used 16 oz of Rigatoni, but penne or ziti would also work for this recipe.

Heat a large skillet over medium-high heat. Add 1 lb of ground beef and a chopped onion. Season with salt, pepper, garlic powder, paprika, Italian seasoning, and red pepper flakes.

Once the ground beef is fully cooked, drain any extra grease and add 1 tbsp of minced garlic. Stir well. Add 2 jars of marinara sauce and 1/2 cup of heavy cream. Stir the sauce together and turn the heat off.

Pour half of the cooked pasta in a greased 9x13 baking dish. Add half of the meat/sauce mixture to the baking dish and stir the pasta around just to get them all covered in sauce.

Next, use a large spoon to drop about 1 1/2 cups of ricotta cheese all over the first layer of the pasta.

Top the ricotta cheese with half of the shredded mozzarella. Add the rest of the pasta, meat/sauce mixture, and the rest of the shredded mozzarella cheese.

Bake in the oven at 375 degrees F for about 25 minutes uncovered. Once the cheese is golden brown and bubbling, it’s time to eat! Top with dried parsley and some Parmesan cheese. Enjoy!

Parmesan Garlic Chicken Pizza is easy to make and so good!

INGREDIENTS
1 lb chicken breast
1 tbsp olive oil
1/2 tsp each salt and pepper
1 tsp each paprika and garlic powder
2 (6.5 oz) packs of pizza crust + ingredients needed for pizza crust
1 cup Alfredo sauce
Buffalo Wild Wings Parmesan Garlic sauce
8 oz shredded mozzarella cheese
4 pieces of bacon, cooked & chopped
Dried parsley

INSTRUCTIONS
Cut chicken breast into small cubes. Heat a large skillet over medium-high heat. Add 1 tbsp of olive oil and the cubes of chicken. Season with salt, pepper, paprika, and garlic powder.

While the chicken is cooking, mix up the pizza crust following the directions on the package. Spray a sheet pan with cooking spray and spread the dough out over the sheet pan. Poke holes in the crust and bake the crust at 475 degrees F for 5-10 minutes.

Once the chicken is fully cooked, remove it from the heat and add a little bit of the Parmesan Garlic sauce. I add just enough to coat the chicken.

Top the pizza crust with some Alfredo sauce. Add a little bit of mozzarella cheese, the chicken, and add more mozzarella cheese. Top with some chopped up bacon. Bake in the oven at 475 degrees F for about 10 minutes or until the cheese is melted how you like it. Top the pizza with dried parsley. Enjoy!

Orange Chicken Sheet Pan Meal is easy to make and so good! I like serving this one with some white rice and egg rolls.

INGREDIENTS
2 lbs chicken breast
1 chopped onion
2 chopped bell peppers
1 small head of broccoli
Salt, pepper, garlic powder, paprika
Red pepper flakes
Olive oil or Sesame oil
Panda Express Orange sauce
Chopped greens onions

INSTRUCTIONS
First, chop all the veggies. Chop the onions and peppers into about the same size. Roughly chop broccoli leaving them in decent sized pieces.
Chop the chicken into cubes.

Spray a large sheet pan with cooking spray. Add all the veggies to the sheet pan and drizzle it with a little bit of oil. Season to your liking with some salt, pepper, garlic powder, and smoked paprika. Stir veggies until they are well coated in oil and seasonings. Slide the veggies to one side of the pan.

In a bowl season the chicken with the same seasonings you used on the veggies. For a little kick of heat add some red pepper flakes. Add a little bit of the Orange sauce and stir until well coated in seasoning and sauce.

Add the chicken to the other side of the sheet pan. Bake at 400 degrees F for 20-25 minutes. Once the chicken is cooked pour off any extra liquid and broil for a few minutes if desired.

Stir chicken and veggies together and top with a little bit more of the Orange sauce and the chopped green onions.

Serve as is or over some rice. This meal is good with white rice or some microwavable fried rice. Enjoy!

White Chicken Enchiladas are an easy and delicious dinner!

INGREDIENTS
1 lb chicken, cooked & shredded
1/2 tsp each salt and pepper
1 tsp each cumin, garlic powder, and dried cilantro
2 tsp chili powder
2 cups Chihuahua Cheese
Fajita size flour tortillas (I used 11)
3 tbsp butter
3 tbsp flour
2 cups chicken broth
1 cup sour cream
4 oz green chiles
Cilantro for topping

INSTRUCTIONS
In a large bowl, combine 1 lb of cooked and shredded chicken and 1 cup of shredded Chihuahua cheese. Season with salt, pepper, cumin, garlic powder, dried cilantro, and chili powder. Stir together well to make sure the seasoning gets well incorporated with the chicken.

Place a spoonful of the chicken mixture into a fajita size flour tortilla and roll it up tight. Place enchiladas in a greased 9X13 baking dish. I used 11 fajita size flour tortillas. Once all tortillas are in the baking dish, it’s time to make the sauce.

Over medium heat, melt 3 tbsp of butter in a large skillet. Add 3 tbsp of flour and let cook for about 1 minute stirring constantly. Add 2 cups of chicken broth and stir until the mixture thickens.

Remove the pan from the heat and add about 1 cup of sour cream and 1 small can of green Chiles (not drained). Stir well. Pour the white sauce over the enchiladas and top the enchiladas with about 1 more cup of shredded cheese.

Bake in the oven uncovered at 375 degrees for 20-25 minutes. You can also broil the enchiladas at the end for just a minute or two. Top with fresh cilantro and serve! Enjoy!

NOTES
-I used shredded Chihuahua cheese, but you could use Monterey Jack or Pepper Jack cheese instead.
-You could use a taco seasoning packet instead of the seasoning blend I used.
-I used 11 fajita size flour tortillas and they fit perfectly in a 9X13 baking dish.
-Using rotisserie chicken would make this recipe even easier

Crockpot Shredded BBQ Chicken Sandwiches are an easy dinner recipe!

INGREDIENTS
2-4 chicken breasts
1 chopped red onion
1 tsp each of salt, pepper, paprika
1 TBSP ranch dressing seasoning
1 TBSP minced garlic
1 TBSP vinegar
BBQ Sauce (I used Buffalo Wild Wing’s Honey BBQ)
Buns
Pepper jack cheese slices

INSTRUCTIONS
Spray a crockpot with cooking spray. Chop a red onion. Add the chicken, onion, minced garlic, vinegar, and all of the seasonings to a crockpot.

Add some BBQ sauce on top. I don't use exact measurements for this part. I usually just do enough to cover the chicken, but you can really use as much as you'd like.

Cook on low for 4-6 hours. Shred the chicken, stir well, and add a little bit more BBQ sauce if needed.

Toast the buns in a skillet over medium heat. Build sandwiches with the bbq chicken and cheese. Enjoy! Let me know if you try it out!

Super EASY dinner or appetizer for Game Day🏈

INGREDIENTS
French Bread
Butter
Salt, garlic powder, and dried parsley
Marinara sauce
Shredded mozzarella cheese
Pepperoni
Fresh pineapple, cut into small cubes
Pickled jalapeño slices
Mike’s Hot Honey
Ranch dressing
Red pepper flakes

INSTRUCTIONS
First, slice a loaf of French bread in half and spread a little bit of butter on each side. Season with some salt, garlic butter, and dried parsley.

Bake in the oven at 400 degrees F for about 10 minutes. Spread marinara sauce on the bread. Top with shredded mozzarella cheese and any of your favorite pizza toppings! I kept one simple with just cheese and pepperoni. The other pizza I added pepperoni, cut up pineapple, and sliced jalapeños.

Put the French Bread Pizzas back in the oven at 400 degrees F until the cheese is melted the pepperoni is crispy! I topped the pepperoni pineapple pizza with some Mike’s Hot Honey, ranch and red pepper flakes! Enjoy!

Boneless Wings are easy to make at home and so good!

INGREDIENTS
2 lb chicken breast
Salt, pepper, garlic powder
4 cups flour
2 tsp salt
2 tsp pepper
2 TBSP paprika
1 tsp cayenne pepper
1 tsp chili powder
2 tsp onion powder
2 TBSP garlic powder
3 eggs
1 1/2 cups milk
Your favorite Wing Sauce

INSTRUCTIONS
Cut chicken into cubes. Season chicken with a little bit of salt, pepper, and garlic powder.

In a container mix flour, 2 tsp salt, 2 tsp pepper, 2 tbsp paprika, 1 tsp cayenne, 1 tsp chili powder, 1 tsp onion powder, and 2 tbsp garlic powder.

In a separate container whisk together eggs and milk. Bread the chicken in the flour, dip in egg mixture, and then back into the flour mixture.

Heat oil to 400 degrees F in a fryer or in a pot on the stove. I used a Presto brand Deep Dryer. Cook in batches for about 4 minutes or until chicken reaches an internal temp of 165 degrees.

Toss in your favorite wing sauce and serve. I used Buffalo Wild Wings Honey BBQ, Spicy Garlic, and Asian Zing.

This One Pan Chicken & Gravy is an easy and delicious 30 minute dinner!

INGREDIENTS
1 lb chicken breasts
Salt, pepper, garlic powder
3 tbsp butter
3 tbsp flour
2 cups chicken broth
1/2 tsp each of salt, pepper, oregano, and thyme
1 tsp each of paprika, onion powder, garlic powder

INSTRUCTIONS
Cut chicken breasts in half lengthwise to make them thinner. Season the chicken with some salt, pepper, and garlic powder (I don’t use exact measurements for this part).

In a skillet over medium high heat melt 3 tbsp of butter. Once the butter has melted add 3 tbsp of flour and stir continuously until well combined. Let cook for a few minutes while still stirring.

Add 2 cups of chicken broth and stir well. Season with salt, pepper, oregano, thyme, paprika, onion powder, and garlic powder. Stir well and when it starts bubbling add the chicken to the skillet.

Make sure the chicken is covered in the gravy, cover with a lid, and turn the heat down to medium low. Let this cook for 12-15 minutes or until the chicken reaches an internal temp of 165 degrees. My chicken was ready in 12 minutes, but they were pretty thin.

Shred the chicken and serve over mashed potatoes! Enjoy! Let me know if you try it out.
