Last night I made 2 big trays of cottage pie and the whole house smelled amazing 😋
This is one of those meals that never gets old in our family — pure comfort food that always disappears fast. Ground beef, carrots, peas, green beans, and corn (you can use any vegetables that you choose) all simmered in a rich gravy, topped with creamy mashed potatoes and baked until golden. This is a good recipe that can use any extra veggies from the garden💚
Recipe below:
Cottage Pie Recipe
(makes 2 trays / about 10–12 servings)
Ingredients
Meat filling:
• 3 lbs ground beef
• 3–4 carrots, diced
• 2 cups frozen peas
• 1½ cups green beans (cut)
• 1½ cups corn
• 3–4 cloves garlic, minced
• 2 tbsp Worcestershire sauce
• 2-3 cups beef broth
• 1 tsp dried thyme (or 1 tbsp fresh)
• 1 tsp Italian seasoning
• Salt & black pepper to taste
• 2 tbsp olive oil or butter
• 1 tbsp flour or cornstarch to thicken
Mashed potato topping:
• 3–4 lbs potatoes, peeled and cut into chunks
• ½–¾ cup milk or cream
• 4–6 tbsp butter
• Salt & pepper
• parsley
Instructions
1. Boil the potatoes in salted water until very tender (about 15–20 minutes). Drain, then mash with butter, milk/cream, salt, and pepper until smooth and creamy. Set aside.
2. While the potatoes cook, heat oil or butter in a large deep pan or Dutch oven over medium heat. Add the garlic and cook for about 1 minute until fragrant.
3. Add the ground beef and cook, breaking it up, until browned. Drain excess fat if needed.
4. Add the diced carrots and cook another 3–4 minutes.
5. Pour in the beef broth, Worcestershire sauce, thyme, Italian seasoning, salt, and pepper. Bring to a simmer. If you want a thicker gravy, sprinkle in the flour and stir well.
6. Add the peas, green beans, and corn. Simmer for 8–10 minutes until the vegetables are tender and the sauce has thickened slightly. Taste and adjust seasoning.
7. Preheat oven to 375°F
8. Divide the meat filling between two baking dishes (9x13 or similar). Spoon the mashed potatoes evenly over the top and spread to the edges. Rough up the surface with a fork so it gets nice and browned.
9. Sprinkle with paprika and parsley (optional). Bake for 30-35 minutes until the top is golden and the filling is bubbling around the edges. Let rest about 10 minutes before serving.
Enjoy! Perfect for leftovers too (if there ever is any left) 💚
