As consumer demand for no- and low-alcohol (NOLO) wines grows, winemakers are rethinking how to preserve what makes wine, wine: flavor, mouthfeel, and aroma.

From vacuum distillation and reverse osmosis to cutting-edge systems like Solos Technologies’ Aromatic Recovery System (ARS), today’s innovations focus on capturing the essence of a wine’s varietal character while removing the alcohol.

“Alcohol keeps volatile compounds in solution,” explains Solos’ Matt Hughes. “As you take it away, the lifespan of those flavors shortens.”

With new tech like ClearAlc and the Equalizer, and thoughtful base-wine production, winemakers are finding ways to maintain authenticity, and meet rising expectations for high-quality NOLO wines.

The takeaway: The next wave of dealcoholized wines isn’t just about less alcohol — it’s about more flavor integrity.

Innovations like channel jackets improved wine fermentation, and SRSS focused on both quality and appearance. Expanding nationally, SRSS produced tens of thousands of tanks for wineries, breweries, and other industries. The family-run business passed to Fred’s children and now to his grandchildren, continuing a three-generation legacy in custom stainless-steel fabrication.

Monitoring metrics like debt service coverage, leverage, and capital expenditures, while maintaining open communication with banks, is essential. Habersham Vineyards & Winery, founded in 1983 by Tom Slick in Habersham County, Georgia, was the state’s first winery to bottle wines from locally grown vinifera grapes. Beginning at Stonepile Vineyard, it moved to Nacoochee Village in 1993 with bigger facilities, tasting rooms and production spaces. Habersham now offers three brands: Habersham Winery (still wines), Creekstone Winery (sweet and sparkling) and Southern Harvest (Muscadine-based).

Today, Craig Boyd is winemaker, Tebeau Slick manages the business, and Matt Simms oversees vineyards. The winery emphasizes sustainable viticulture, experimentation and visitor experiences, producing 12,000 cases annually.
