Mahi-mahi, also known as dolphinfish or dorado, are one of the fastest-growing fish species, capable of reaching significant sizes and weights within a short period, often reaching over 4 feet in length and 40 pounds in weight in a year.

Mahi-mahi are also known as "dorado" because "dorado" means "golden" in Spanish, and the fish's vibrant, golden-yellow coloration, especially when out of the water, led to this name.

While "mahi-mahi" is the Hawaiian name for this fish, it's also commonly called "dolphinfish" (though it is misleading because it's not related to the marine mammal dolphin).

These fish are most commonly found in the waters around the Gulf of Mexico, Costa Rica, Hawaii, and the Indian Ocean.
