Bell Pepper Nachos

Ingredients:
1 cup (5.26 oz) bell pepper, any color (2 greens)
3 oz 95% lean ground turkey or shredded chicken (1/2 leaner)
1/2 cup (2 oz) moderate fat cheese (1/2 lean)
1 tsp taco seasoning (1 condiment)
1/4 c (1.32 oz) diced tomato (1/2 greens)
1/4 cup (.88oz) sliced green onions (1/2 greens)
1 tbsp diced red onion (1 condiment)
2 tbsp nonfat or low fat Greek yogurt (1 condiment)
1 1/2 oz mashed avocado or 2 tbsp of quacamole (1 healthy fat)
Cilantro for garnish
Sliced jalapeño as garnish (optional)

Directions:
1 Cook meat till done, add taco seasoning and a little water. Cook for a few more minutes.

2 Slice and quarter bell pepper into chip size pieces.

3 Using a cookie sheet or individual dish layer in order; peppers, meat, cheese, onion.

4 Bake at 350 for 13 minutes. Top with tomato, Greek yogurt, and guacamole

Makes 1 serving

Per serving:
1 leaner 3 greens 3 condiments 1 healthy fat

Feel free to multiply by as many people you’d like to serve

Easy Greek Yogurt Stuffed Mushrooms

Ingredients:
* 2 1/2 cups (7.6 oz) mini bella mushrooms, cleaned and stems removed (save stems for filling) (5 greens)
* 2 tsp olive oil (2 healthy fats)
* 6 oz 2% greek yogurt (1/2 leaner)
* 3 tbsp parmesan cheese (3 condiments)
* ½ cup green onions, coarsely chopped (1 green)
* ¼ cup fresh parsley (1 condiment)
* 1 garlic clove (1 condiment)
* 1/8 tsp Salt (1/2 condiment)
* 1/4 tsp pepper (1/2 condiment)

Instructions:
* Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper and then drizzle olive oil evenly over the paper. Set aside.

* Place the parmesan cheese block in a food processor fitted with a S-shaped blade and pulse until finely grated. Or use pre grated parmesan, reserve 1 tbsp parmesan for final topping.

* Then add the mushroom stems, greek yogurt, green onions, parsley, garlic clove, and salt and pepper to the food processor. Blend until creamy and smooth. Taste for additional salt and pepper.

* Using a spoon, fill each mushroom cap with even amounts of the greek yogurt mixture until the mixture is used up.

* Place each stuffed mushroom on the baking sheet (filled-side up) and top with a sprinkle of parmesan cheese.

* Bake for 20-25 minutes, until the mushrooms are tender. Garnish with chopped parsley. Best served immediately (warm).

Crustless Chicken Pot Pie

Yield: 1 serving
Per serving:
1 Leaner
1 Green
1 Healthy Fat

Ingredients:
9 oz raw boneless, skinless chicken breast, cubed
1 Tbsp light Italian dressing
½ cup chicken broth
½ tsp minced garlic
¼ cup chopped celery
¼ cup chopped green pepper
Pinch of salt
1/8 tsp pepper

Directions:
Cook chicken in Italian dressing in a skillet over medium heat until done (internal temperature 165°F). Remove chicken from skillet, and set aside.
Add chicken broth, garlic, and vegetables to the same skillet, and cook over medium-high heat until vegetables are tender. Season with salt and pepper.
Add cooked chicken.
Transfer into a large ramekin or small casserole dish, and serve immediately.
