Steamed White Fish Street Tacos

Makes 2 Servings.
Per serving: 1 leanest, 3 greens, 2 healthy fats, and 3 condiments

Ingredients
1 pound raw cod filets
1/2 tsp garlic powder
1/2 tsp salt, divided
1/2 cup diced tomato
2 TBSP chopped red onion
1/2 jalapeño pepper, chopped
2 TBSP chopped fresh cilantro
1 TBSP lime juice
6 large lettuce leaves
6 ounce avocado, sliced

Directions
1. season cod with garlic powder and 1/4 tsp salt. Steam fish 5-10 mins. Flake the fish with your fingers or a fork removing any bones.
2. Meanwhile prepare pico de gallo. In a small bowl combine tomato, red onion, jalapeño, cilantro, lime juice and other 1/4 tsp salt.
3. To prepare tacos top lettuce leaves with fish, avocado and pico.

Air Fried BBQ Tofu Summer Salad

Ingredients
* 4 tsp almond flour
* ½ tsp smoked paprika
* ½ tsp celery seed, crushed
* ¼ tsp onion powder
* 30 oz. extra firm tofu
* Cooking Spray
* 2 tbsp plain, nonfat Greek yogurt
* 1 tosp BBQ Sauce sugar free
* 1 cup broccoli florets
* 4 cups romaine or radicchio salad mix

Directions

Preheat your air fryer to 400°F.
In a bowl, combine the almond flour, smoked paprika, crushed celery seed, and onion powder.
Cube the tofu into 1-inch cubes.
Sprinkle spice mix over cubes and toss.
Spray the air fryer basket with cooking spray. Add the tofu cubes in a single layer, you will probably have to cook in 2 to 3 batches. Spray cubes with cooking spray. Cook for 15 minutes, shaking the basket after 5 minutes.
Continue with remaining tofu cubes.
In a small bowl, mix the yogurt and BBQ sauce. Add 1 to 2 tablespoons water (for 2 servings) to thin out to a drizzle consistency. Set aside.

Place broccoli in a microwave-safe bowl with 1 to 2 tablespoons water (for 2 servings) and cover with a paper towel. Microwave on high for 1 minute and then allow time for broccoli to cool.
Divide salad mix into 1 cup per serving (2 cups for 2 servings) and place each portion in a bowl. Top each with a ½ cup of broccoli, 15 ounces tofu cubes and a drizzle (1 tablespoon per bowl) of BBQ yogurt dressing

Zucchini Spinach Manicotti

Ingredients
3 cups zucchini
1 ½ cups part-skim ricotta
1 egg
1 cup frozen spinach, thawed and patted dry
1 ½ cups reduced-fat, shredded mozzarella, divided
¼ cup grated parmesan
1/8 Tsp salt
Pinch nutmeg
1 cup low-sugar tomato sauce

Directions:
Preheat oven to 375 ˚F.

Using a mandoline slicer, slice zucchini lengthwise into 1/8-inch thick slices; set aside.
In a medium-sized bowl, combine ricotta, egg, spinach, ½ cup mozzarella, parmesan, salt, and nutmeg.

Layer three slices of zucchini parallel to each other, and so that they are slightly overlapping one another. Place a large spoonful of ricotta mixture on one end of the zucchini slices, and roll up the zucchini. Place the stuffed zucchini next to each other into a lightly-greased 9×9-inch baking dish.

Pour tomato sauce over top of the zucchini, and then sprinkle with cheese.
Bake for 25 minutes.

Yield: 4 servings

Per serving: 1 Lean | 3 Green | 1 Condiment
