πŸ¦€ Boiling Crab-Style Butter Sauce
This makes a rich, spicy, garlicky sauce perfect for shrimp, crab legs, lobster, crawfish, corn, potatoes, and sausage.
Ingredients
2 sticks unsalted butter (1 cup)
Β½ medium yellow onion, finely diced
8–10 cloves garlic, minced
1 tbsp Old Bay
1 tbsp Cajun seasoning
2 tsp paprika
1 tsp oregano
1 tsp lemon pepper
½–1 tsp cayenne pepper, depending on heat preference
1 tsp chili powder
1–2 tbsp hot sauce
1Β½ tbsp sugar
1 tbsp dried parsley flakes
2 tbsp fresh lemon juice
ΒΌ cup seafood broth or water
Directions
Melt the butter in a large saucepan over medium-low heat.
Add the diced onion and cook for about 4–5 minutes, until softened.
Add the garlic and cook for another 1–2 minutes. Don't let the garlic burn.
Add the Old Bay, Cajun seasoning, paprika, oregano, lemon pepper, cayenne, and chili powder. Stir constantly for about 30 seconds to bloom the spices.
Stir in the sugar and hot sauce.
Add the seafood broth or water and simmer on low for about 5 minutes, stirring occasionally.
Turn the heat to low and add the lemon juice and parsley flakes.
Taste and adjust:
More Cajun/Old Bay = saltier and more savory
More cayenne/hot sauce = hotter
More sugar = sweeter
More lemon = brighter flavor

Tender, juicy lamb chops coated in a sweet, spicy, garlicky jerk glaze.

Ingredients

8 lamb chops

2 tbsp jerk seasoning

1 tbsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Β½ tsp black pepper

1 tbsp olive oil

2 tbsp butter

Honey Jerk Glaze

ΒΌ cup honey

2 tbsp jerk sauce or jerk marinade

1 tbsp soy sauce

1 tbsp brown sugar

1 tbsp lime or lemon juice

3–4 cloves minced garlic

1 tsp fresh grated ginger

Β½ tsp red pepper flakes β€” optional

Directions

1. Season the lamb: Pat lamb chops dry. Rub with olive oil, jerk seasoning, garlic powder, onion powder, paprika, and black pepper. Let them marinate for at least 30 minutes, preferably 2–4 hours.

2. Make the glaze: Mix honey, jerk sauce, soy sauce, brown sugar, lime juice, garlic, ginger, and red pepper flakes.

3. Sear: Heat a large skillet over medium-high heat. Add butter and sear lamb chops for about 3–4 minutes per side, depending on thickness.

4. Glaze: Lower the heat and pour the honey jerk mixture over the chops. Flip the chops several times, spooning the glaze over them until they're beautifully caramelized and sticky, about 2–3 minutes.

5. Check doneness: For food safety, cook lamb chops to at least 145Β°F internal temperature, then rest for 3 minutes.

6. Finish: Spoon the extra honey jerk glaze over the lamb and garnish with fresh parsley or green onions.
