I often wondered... 🤔

if I might not have developed an eating disorder if I’d had something to support my mental wellness when I was a child.... and I guess I will never know if it was a trauma response or more of an environmental reaction....

Just had a little realization this morning on my way to work...

I've struggled with menopausal symptoms (especially the weight struggles, night sweats and weirdly enough for me, depressive feelings!) 🎉

It dawned on me this morning, that I haven’t had a blue day in months! 🌈 You know, those days that seem to come out of nowhere and just wash over you with a wave of sadness? Yeah, those days.

Looking back, I remember when these blue days were a regular thing for me, catching me off guard every so often - like seriously OUT OF THE BLUE 😂 But lately? I’ve been all about those better vibes! 🌞

🥗🥗Cranberry Pecan Chicken Salad with Poppy Seed Dressing🥗🥗

Whether you're in need of a quick lunch fix or a fancy dinner starter, this salad's got you covered! 🥗🐔👩‍🍳💃

Salad Ingredients:
2 cups cooked chicken, shredded or chopped
6 cups mixed salad greens
1 cup dried cranberries
1 cup pecans, toasted
Optional additions: sliced apples, feta cheese, or avocado

Poppy Seed Dressing Ingredients:
1/3 cup mayonnaise
1/4 cup milk
2 tablespoons sugar
1 tablespoon apple cider vinegar
2 teaspoons poppy seeds
Salt and pepper to taste

Instructions:
In a large bowl, combine the salad greens, cooked chicken, dried cranberries, and toasted pecans.
In a separate small bowl, whisk together the mayonnaise, milk, sugar, and apple cider vinegar until smooth. Stir in the poppy seeds and season with salt and pepper.
Drizzle the dressing over the salad and toss to combine. Adjust the amount of dressing to your liking.
If using, add the optional ingredients to the salad.
Serve immediately, garnished with extra cranberries and pecans if desired.

Paddy had been drinking at his local Dublin pub all day and most of the night celebrating St Patrick’s Day.

Mick, the bartender says, “You’ll not be drinking anymore tonight, Paddy”

Paddy replies “Okay Mick, I’ll be on my way then.”

Paddy spins around on his stool and steps off. He falls flat on his face.

“Dammit,” he says and pulls himself up by the stool and dusts himself off.

He takes a step towards the door and falls flat on his face.

“Oh God, this is gettin' worse,” he slurs.

He looks to the doorway and thinks to himself that if he can just get to the door and some fresh air he’ll be fine.

He belly crawls to the door and shimmies up to the door frame.

He sticks his head outside and takes a deep breath of fresh air, feels much better and takes a step out onto the pavement.

He falls flat on his face.

“I’ll never make it home,” he mumbles amid more curses.

He can see his house just a few doors down, and crawls to the door, shimmies up the door frame, opens the door and shimmies inside.

He takes a look up the stairs and grunts, “No way”. He crawls up the stairs to his bedroom door and says “Maybe I can just make it to the bed.”

He takes a step into the room and falls flat on his face.

He says, “To hell with it” and falls into bed.

The next morning, his wife, Bridie, comes into the room carrying a cup of coffee and says, “Get up Paddy. Did you have a bit to drink last night?”.

Paddy says, “I did Bridie. I was totally scuttered gassed. Me head’s throbbin’. But how’d ye know?”

“Mick phoned ... You left your wheelchair at the pub.”

Last year, I embarked on a transformative journey, shedding 50 pounds and finding unexpected success. Despite this achievement, something felt incomplete.
