HOMEMADE ALMOND JOY CANDY BARS

This recipe is gluten free, non dairy, sugar free and a healthier option to make you happy and satisfied.
✨ Ingredients ✨
2 cups unsweetened coconut flakes/shreds
1/4 cup raw honey or agave/maple syrup
1/4 cup coconut oil
1/4 cup coconut milk
6oz dark or semi-sweet chocolate (i used non dairy)

First, melt the coconut oil. next, make the coconut filling: add the shredded coconut, coconut milk, honey/maple syrup, and melted coconut oil to a food processor and process for about a minute, scraping down the sides as needed.
Once smooth, add the filling to an 8x5 loaf pan lined with parchment paper and smooth it out. next, top with roasted almonds (be sure to press the almonds down into the coconut mixture).
Place in the freezer to harden for several hours. once frozen, remove the from the freezer and slice into 12 bars.
Next, melt your chocolate. once melted, coat each bar in melted chocolate and place on a tray lined with parchment paper. place in the fridge to harden for several hours.
Once hardened, remove from the fridge and enjoy! store in the fridge or freezer.
