PARTY PICO DE GALLO

Need a fresh, quick, and delicious treat for your party platter tonight? You can't go wrong with this one!

Lean and Green Counts:
🥦 3 Green
🥦 3 Condiment

Makes 4 servings.

Here's what you'll need:

• 1 cup Roma tomatoes diced
• 1.5 cup Grape Tomatoes halved
• 1.5 cup Yellow Cherry Tomatoes halved
• 1 cup Leeks diced
• 4 small Jalapeño Peppers, finely diced
• 1 small Fresh Cilantro chopped
• 3 tbsp Lime Juice
• 1 tbsp Apple Cider Vinegar
• 1/2 tsp Sea Salt
• 1/2 tsp Black Pepper

Here's what to do:

Mix all ingredients together and serve.

Cauliflower Falafel

Yield: 1 Serving
Per serving:
1/4 Leanest
2 Green
2 Healthy Fats
3 Condiments

Ingredients:

1/2 cup (4.3 oz) egg substitute, Egg Beaters
1 cup (3.52 oz) raw cauliflower
1 tsp oil, olive
1/2 ounce almonds
1/2 tsp cumin
1/2 clove garlic, clove
1/2 tsp cayenne pepper
1 tsp coriander, ground

Directions:

Chop cauliflower into small-sized pieces and add them to a food processor. Pulse until blended with a slightly grainy texture.
Grind the almonds in a similar manner – just be careful to not over grind them as a slightly crunchy texture complements the dish nicely.
Combine the ground cauliflower and ground almonds in a bowl. Add the rest of the ingredients and stir until well blended.
Heat your oil until sizzling. While it is heating, form the mix into 8 three-inch patties. Aim for the thickness of a hockey puck.
Saute them four at a time until browned on one side and then flip and cook the other side. Resist the urge to flip too soon – you should see the edges turning brown before you attempt it – maybe 4 minutes or so per side.

Extra tip:
Add a dollop of Greek yogurt for a little extra flavor and serve it over a bed of mixed greens. Three ounces of low-fat Greek yogurt is equal to 1/4 Leaner (for a total of 1/2 Lean) and 1 cup of mixed greens equals 1 Green (for a total of 3 Greens).

Thai Coconut Curry Chicken

Serves 2
Ingredients:
1/4 cup scallions chopped (whites and greens separated)
1 1/4 tbsp Taste of Asia Red Curry Paste
1 garlic clove minced
3/4 cup Thai Kitchen lite Coconut milk
2 tsp fish sauce
2 tbsp fresh cilantro chopped
1/2 tsp salt
16 oz boneless skinless chicken breasts cubed (2 inches)
24 oz Cooked Cauliflower rice

Directions:
Spray a large nonstick skillet with cooking spray. Over medium high heat add scallion whites, garlic, and red curry paste and sauté 1 minute. Add cubed chicken and salt cooking until chicken is done and no longer pink inside. Add coconut milk and fish sauce, mix well. Simmer 2 minutes. Remove from heat, mix in scallion greens and cilantro. Serve over cauliflower rice.
