Greek Yogurt Pancake Muffin Bites – Lemon Blueberry 🍋🫐🧁
Mini muffins that taste like pancakes? Yes, please! Who's grabbing a handful of these cuties? 🙌
Ingredients:
* 1 cup all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 teaspoon baking powder
* Pinch of salt
* 1 tablespoon lemon zest
* 2 tablespoons lemon juice
* 1/2 cup plain Greek yogurt
* 1/4 cup milk
* 1 large egg
* 2 tablespoons maple syrup or honey
* 1/2 teaspoon vanilla extract
* 1/2 cup fresh or frozen blueberries
* Nonstick spray or oil for greasing
Instructions:
1️⃣ Preheat the oven to 350°F (175°C) and grease a mini muffin tin with nonstick spray or oil.
2️⃣ In a bowl, whisk together flour, baking soda, baking powder, salt, and lemon zest.
3️⃣ In another bowl, mix Greek yogurt, lemon juice, milk, egg, maple syrup, and vanilla extract until well blended.
4️⃣ Combine the wet ingredients with the dry ingredients and stir gently just until incorporated.
5️⃣ Gently fold in the blueberries.
6️⃣ Spoon the batter into the muffin tin, filling each cup about 3/4 full.
7️⃣ Bake for 13–15 minutes, or until the tops are lightly golden and a toothpick comes out clean.
8️⃣ Cool in the pan for 5 minutes, then remove to a wire rack to cool completely.
