Eight dollars a plate, first Saturday of the month, and roughly the entire town shows up. 🥞 This is how a lot of small Texas communities fund the things nobody else is going to fund. A hose. A set of turnout gear. A scholarship for a kid whose family cannot swing tuition. A family whose house burned in February.

The men on those griddles are the same ones on the truck at two in the morning. Somebody's wife has been mixing batter since five. The plywood sign was painted by a kid in the junior program. And the line goes out the door because everybody in that room understands the arrangement completely: you are not buying breakfast, you are paying for the thing that shows up when your world catches fire. 🚒

Cities have tax bases and bond elections. Towns of nine hundred have a griddle, a coffee urn, and a Saturday morning. What does your community do a fundraiser for, and does the whole town turn out?
