I just got an email from my friend Jeff John, another foodie and old rifle lover. A couple of years ago, I sent him some of the jerky I'd made in writing Stalking the Wild Jerky. In return, he sent me 3 quarts of Hatch Chilies and several baggies of dried chilies.
Recently he decided to make some jerky, from the book, and let me know what happened. (What I found most interesting is that while he did not have nutmeg in his cupboard, he did have mace. My guess is he uses the mace in sausage. And rarely makes apple pie!)
His adjustments to the recipe are interesting.

Here's his email

"I just tried the Madeira Jerky with a few changes. I marinated beef roundsteak in Marsala wine instead of Madeira (was going to have to go far to get some) and Mace instead of Nutmeg. I thought I had nutmeg, but didn’t for some reason.

The other thing is I cold smoked the meat first in an indoor smoker from Hammicher Schlemmer before putting it in the air fryer/dehydrator at 160 degrees for 3 hours. I tried a piece coming out of dehydrator and it tasted pretty darn bright and fresh! I don’t think I’ll have to wait, but I will let it cool in the dehydrator, at least until I have to sample it again. Couldn’t wait. The 2nd piece tastes really good without waiting.

John and I travelled all over the US one fall, 12,000 miles on the pick-up to hunt all kinds of birds in all kinds of habitat to write this book for Ducks Unlimited. When I told DU I’d do it, John grabbed his favorite pump shotgun and removed the plug. I’m not sure I’ve ever seen him happier in all the years we’ve been married! The book is on sale until next Monday@ $14.50.

In honor of Lena's 12th birthday--she turned 84 in Dog Years on 7/8/23--we are throwing her an Upland Game Bird Cookery Sale! Only $14.50 for this upland cookbook published originally by Ducks Unlimited, with 87 recipes and lots of how to photos. All upland birds from the delicate and tender to the red-meated, tough-as-shoe-leather varieties. Plucked, unplucked, breasts, legs, whole birds, and parts--even Wyatt Earp's dove recipe. (Someone asked him what was the best shot he'd ever made. His answer? Ten doves with one shell.. And he was reported to be a gourmet cook. This dove recipe is a bit weird sounding, to modern taste buds, but it is delicious.)
