Apricot Chia Pudding — Easy Make-Ahead Breakfast
This creamy apricot chia pudding is my favorite no-cook breakfast! Prep it the night before, and wake up to something sweet, healthy, and ready to eat. Packed with protein from Greek yogurt and fiber from chia seeds — it keeps you full for hours.
Ingredients (serves 2):
• 4 tbsp chia seeds
• 1 cup (240 g) Greek yogurt
• 4 ripe apricots
• 2 tbsp honey
• Optional: a splash of milk to thin it out
