COCONUT CREAM LOAF CAKE 🥥🍰

Ingredients

1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup coconut milk
1/2 cup shredded coconut

For the frosting

8 oz cream cheese, softened
1/4 cup butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Coconut flakes for topping

Instructions

1. Preheat oven to 350°F and grease a loaf pan.
2. In a bowl whisk together flour, baking powder, and salt.
3. In another bowl beat butter and sugar until light and fluffy.
4. Add eggs one at a time, then mix in vanilla extract.
5. Alternate mixing in the dry ingredients and coconut milk until smooth.
6. Fold in shredded coconut.
7. Pour batter into the loaf pan and bake for 45–55 minutes or until a toothpick comes out clean.
8. Let the cake cool completely before frosting.
9. Beat cream cheese, butter, powdered sugar, and vanilla until fluffy.

FUNFETTI RICE KRISPIE TREATS 🌈🍬

Ingredients

6 cups Rice Krispies cereal
1 bag mini marshmallows
4 tbsp butter
1 tsp vanilla extract
1/2 cup white chocolate, melted
Rainbow sprinkles

Instructions

1. Line a baking dish or tray with parchment paper.
2. Melt butter in a large pot over low heat.
3. Add marshmallows and stir continuously until completely melted and smooth.
4. Stir in vanilla extract.
5. Remove from heat and fold in the Rice Krispies cereal until fully coated.
6. Press the mixture evenly into the prepared pan using lightly greased hands or a spatula.

For the raspberry filling
2 cups raspberries
1/3 cup sugar
1 tablespoon lemon juice
1 tablespoon cornstarch mixed with 2 tablespoons water

For the frosting
8 oz cream cheese, softened
1/2 cup butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
1 cup shredded coconut

Instructions

1. Preheat oven to 350°F and grease two round cake pans.
2. Beat butter, oil, and sugar together until light and fluffy.
3. Add eggs one at a time, then mix in vanilla.
4. Stir together flour, baking powder, and salt in a separate bowl.

2 1/2 oz vodka or gin
1/2 oz dry vermouth
1/2–1 oz olive brine
Ice
Green olives for garnish
Orange peel twist (optional)
Sea salt for rim (optional)

Instructions

1. Chill a martini glass in the freezer for a few minutes.

3. Fill a cocktail shaker with ice.

12 ounces spaghetti
2 cups cherry tomatoes, halved
1 container mozzarella pearls
3 tablespoons olive oil
2 cloves garlic, minced
Fresh basil, chopped
1/2 teaspoon red pepper flakes

For Topping

Freshly grated parmesan cheese
Extra basil leaves
Flaky sea salt

Instructions

4 boneless skinless chicken thighs or breasts
2 tablespoons olive oil
4 cloves garlic, minced
1/3 cup honey
1/4 cup soy sauce
2 tablespoons sweet chili sauce
1 tablespoon sriracha
Juice of 2 limes
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon salt

For Garnish

Sliced red chili peppers
Green onions
Sesame seeds
Lime wedges

Instructions

1. In a bowl, whisk together the honey, soy sauce, sweet chili sauce, sriracha, lime juice, garlic, smoked paprika, salt, and black pepper.
