Crispy Churro Cheesecake Donut Cookies with Cinnamon Sugar

Ingredients:
For the cookies:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
For the cheesecake filling:
4 oz cream cheese, softened
2 tbsp powdered sugar
1/2 tsp vanilla extract
For the cinnamon sugar coating:
1/4 cup granulated sugar
1 1/2 tsp ground cinnamon
2 tbsp melted butter
Instructions:
Prepare the cookie dough:
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla, mixing until smooth.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.
Duration: 10 minutes
Make the cheesecake filling:
In a small bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Transfer to a piping bag or plastic bag with the tip cut off for easy filling.
Duration: 5 minutes
Shape and fill the cookies:
Roll the cookie dough into 1 1/2-inch balls. Flatten slightly, then use your thumb or a small spoon to make an indentation in the center.
Pipe a small amount of cheesecake filling into the center of each cookie.
Chill in the fridge for 10–15 minutes to firm up before baking.

Bake the cookies:
Preheat oven to 350°F (175°C). Place cookies on a lined baking sheet and bake for 10–12 minutes, or until the edges are golden.
Let cool slightly on the baking sheet before transferring to a rack.
