The easiest, yummiest, healthiest, high protein dinner your kids will also love! 🦐👊🏼😎
Makes 7-8 skewers…
For the marinade…
- 2 tbsp extra virgin olive oil
- ⅓ cup coconut aminos (or soy sauce)
- 3-4 tbsp unsalted butter, melted
- 5 garlic cloves, peeled and minced
- 1 tbsp ginger, peeled and grated
- 1 lemon, juiced (about 2 tbsp)
For the skewers…
- 1 lb. raw shrimp, peeled and deveined
- 2 cups pineapple, chopped into chunks
- 1 green bell pepper, deseeded and chopped into chunks
- 1 red bell pepper, deseeded and chopped into chunks
- ¼ cup cilantro
- salt and pepper to taste
Directions:
1. Wash and cut your pineapple and peppers. Set aside in separate bowls.
2. Place the shrimp into a small bowl, add 1 tbsp of oil, coconut aminos or soy sauce, butter, garlic, ginger, and lemon. Mix to combine the marinade and let it sit for 10 mins (don’t let it sit too long because the citrus can cook the fish!).
3. Take your wooden skewers (I soak them in water prior to prevent burning) and assemble them in the order you desire, and repeat! Make sure to leave about an inch on each end. Place onto a tray.
4. Heat a cast iron griddle on high heat. Brush 1 tbsp of oil onto the grill to prevent sticking (you can tell it is hot enough by dropping water on the pan and seeing the water roll around). Once hot, place your skewers on the griddle and turn every 3-4 minutes until your shrimp is cooked all the way through. Remove from heat and onto a clean tray.
5. Assemble: slide all of the pieces on one skewer onto a plate. I enjoy this dish with a side of rice. Top with cilantro and serve!
