Ingredients:

1 cup cacao nibs

1/2 cup powdered sugar

Instructions:

Lightly roast cacao nibs at 250°F for 10–15 minutes.

Blend the nibs in a food processor until they form a paste. This could take a while.

Prepare the batter the night before:

1 vanilla bean

2 cups milk

2 tbsp butter

2 eggs

1 cup sugar

Pinch of salt

¾ cup flour

1 tbsp rum

Simmer milk with vanilla bean. Let it infuse. Whisk eggs, sugar, and salt. Add flour, then melted butter. Slowly pour in warm milk and stir in rum. Refrigerate overnight.

Baking instructions: Butter molds, fill them, and bake for 10 minutes at 400°F. Reduce to 375°F and bake for another 45 minutes.

For the vanilla cream:

100ml cream

50g mascarpone

2 tbsp powdered sugar

Whip until stiff.

To serve: Flip cannelés, scoop out the center, and fill with cream.

You’ll Need:

1½ cups almond flour

4 eggs

3 tbsp Greek yogurt

6 strips bacon, diced

1¼ cups shredded cheddar

¼ cup green onion

2 tsp baking powder

½ tsp baking soda

1 tsp garlic powder

½ tsp onion powder

Salt & pepper

Directions:

Preheat oven to 400°F. Line baking tray with parchment.

Mix dry ingredients, then whisk eggs and yogurt in another bowl.

Combine everything, folding in bacon, onions, and cheddar.

Form into 8 biscuits, press gently, and top with more cheese.

Bake for 10 minutes until golden.
