Coconut, pineapple, caramel in Pancake form? Sign me up!
They’re ridiculous.
Sweet, tropical, exactly what I wanted.
You should make them too.
Ingredients
* 1 ½ cups AP flour
* 2 tbsp sugar
* 1 tbsp baking powder
* ½ tsp salt
* ¾ cup coconut milk
* ¼ cup pineapple juice
* 2 tbsp .lopez.usa cream of coconut
* 1 large egg
* 2 tbsp melted butter
* ½ tsp vanilla extract
* ½ cup crushed pineapple (drained)
Caramel Sauce
* ½ cup brown sugar
* 2 tbsp butter
* ¼ cup pineapple juice
* ¼ cup cream of coconut
* Pinch of salt
* 1 tbsp dark rum
Garnish:
* Whipped Cream
* Toasted Coconut
* Amarena Cherries
Instructions:
1. Whisk flour, sugar, baking powder, and salt in a bowl.
2. Whisk coconut milk, pineapple juice, cream of coconut, egg, melted butter, and vanilla in another bowl.
3. Combine wet and dry ingredients until just mixed. Fold in drained pineapple and toasted coconut. Rest 5 minutes.
4. Cook ¼ cup portions in a buttered pan over medium-low heat, 2–3 minutes per side.
5. Cook butter, brown sugar, and pineapple juice in a saucepan for 2–3 minutes.
6. Add cream of coconut and salt. Simmer 2–4 minutes until thick and glossy. Add rum if using.
7. Serve stacked with sauce poured over top and finish with toasted coconut and butter.
