Delicata squash is my go-to when I need something cozy, quick, and zero-stress. No peeling, barely any prep, and it roasts in under 30 minutes.
Spiced & Roasted Delicata Squash
1 delicata squash
1 tbsp olive oil
1 tbsp maple syrup
1 tsp cinnamon
½ tsp smoked paprika
Salt to taste
1. Mix everything together.
2. Roast at 400°F for 20–25 minutes, flipping halfway, until tender and caramelized.
3. Eat.
