First time in Hanoi & the initial energy of this city hits you immediately! The traffic, the history, the street life, it is completely different from the South.

​My very first stop had to be Cà Phê Trứng (Egg Coffee). I wasn't sure what to expect from whipped egg yolk over hot coffee, but it tastes like a liquid tiramisu or a rich custard dessert.

​Hanoi definitely leaves an impression right out of the gate!

This is one of the most authentic street foods in Bạc Liêu and in the Mekong Delta! Bananas grilled directly over hot charcoal (Chuối Nướng) with an interesting flavor/texture palette that's dense, chewy, and has a incredible smoky, cedar like aroma that you can smell from down the street!

Since Bạc Liêu is famous for its salt, my friend Huy and I went deeper into the market to check out the raw cooking ingredients on offer.

I love how traditional markets display everything openly across the stalls. Huge thanks to Huy for translating! I'm working on my Vietnamese, but I want to keep this content focused on English.

Throw back to visiting the Wind Farm Resort and an aquaculture farm in Bac Lieu. What an awesome treat! Seeing those massive offshore wind turbines spinning over the ocean and exploring the local Aquaculture seafood farming in the region was such a great meaningful experience.

I can't wait to visit this amazing part of Vietnam again in the future!

If you know me, you know that one of my absolute favorite things to do when traveling is perusing through local markets. This spot in Bạc Liêu was packed with everything from vibrant fabrics and raw materials to local street foods.

Traditional markets are the true heartbeat of local culture, but many are seeing less foot traffic these days. I hope that by documenting these spaces, we can help highlight their value and keep them alive.

If you love authentic street food, you HAVE to try traditional Vietnamese Grilled Bananas (Chuối Nướng)!

In this video i'm exploring the local food scene down in Bạc Liêu (Mekong Delta) to track down this incredibly simple, yet amazing Southern Vietnamese snack.

Unlike the famous version wrapped in sticky rice, this is pure, "naked" Chuối Nướng is just local sweet bananas peeled and grilled directly over hot charcoal braziers.

Grilling completely transforms the fruit:
The Texture: It develops a surprisingly dense, slightly chalky, and chewy bite. Not soft or mushy at all!
The Aroma: This is the absolute best part. The smell of the fruit caramelizing over the open coals honestly reminds me of a cedar wood sauna or old cedar wood ships. It’s a completely unique, smoky, woody scent you can catch from down the street.
