In Italy, seafood on Christmas Eve is common, especially in the south, but there’s no set “seven.” The idea comes from Catholic fasting traditions and the symbolic power of the number seven — from the days of Creation to the sacraments.

When millions of Southern Italians immigrated to the U.S. in the early 1900s, these customs were preserved. While traditions evolved in Italy, this one stayed frozen in time in Italian American communities.

Made from cooked/concentrated grape must blended with wine vinegar. It comes in three types — standard, Aged (3+ years), and Riserva (5+ years) — versatile and perfect for everyday cooking and finishing dishes.
