Join me for my Fall Baking Series! Bake #1 is a decadent pumpkin cream cheese muffin topped with a brown sugar cinnamon struesel. 😋 🎃 Each bite is full of fall flavor. I promise you won't be able to eat just one!
Here's what you need:
1 3/4 cup flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1 tsp pumpkin spice
1/2 cup butter
1 cup sugar
2 large eggs
1 cup pumpkin puree
1 tsp vanilla extract
For the filling:
8 oz block of cream cheese
1/4 cup sugar
1/2 tsp vanilla extract
For struesel topping:
1/4 cup cold butter
1/4 cup Brown Sugar
1/4 cup sugar
1 tsp cinnamon
* In a large mixing bowl, combine the sugar, eggs, and butter until creamed.
*Scoop the pumpkin puree in and pour in the salt, pumpkin spice, cinnamon, baking soda, baking powder, and vanilla extract and mix together.
*Lastly, blend the flour together with the wet mixture until well combined.
*Place 3 tbs of batter in each cupcake liner.
*for the filling blend together the cream cheese, vanilla, and sugar until smooth. Place into a piping bag and fill the center of the uncooked muffin.
* For the struesel, combine the butter, sugars, and cinnamon in a bowl. With a fork, mash the ingredients together until they form a crumble. Sprinkle about 1 tbs of the struesel on each uncooked muffin.
*Place in a preheated 350° oven for 18 minutes or until fully cooked. Sprinkle a little more struesel on top.
