Mini French Dips are small but mighty sandwiches that are full of flavor and are so simple to put together. 💛
The recipe is below ⬇️

2 lbs roast beef
8 slices of Swiss cheese
1 pack of 8 hotdog buns
1 brown gravy packet
1 cup beef broth ( I use bouillon)
1 Au Jus packet

Mix together brown gravy and the beef broth then roll your roast beef slices and place in the gravy mix.
On a griddle lay flat your hot dog buns and let them toast on low heat. Turn over then add cheese.
(If you’re making fries, I HIGHLY recommend Kinder’s Garlic Fries 👏, be sure to have them be the first things you get going so everything finishes at the same time. )
Once cheese starts to melt add your beef (slices per sandwich at least)
Let sit on low while you prepare your au jus.
Just pour the packet into the gravy mix and add a cup of water. Stir together.

Serve and enjoy! 😊

Let’s make something simple and Delicious 😋 This Comfort Chicken and a rice skillet is a crowd pleaser. It takes 30 minutes to cook and the recipe is simple. Enjoy! 💗

1 large chicken breast butterflied
5 minute rice ( 1-2 cups)
1 can cream of chicken
1 cup of milk ( use the can )
4 tbsp butter
1 tsp garlic powder, onion powder
Salt and pepper
1 bag frozen broccoli florets
2 cups shredded Cheddar jack cheese

In a large skillet with 2 tbsp cooking oil sear the chicken (add salt and pepper to chicken) and cook till golden brown. With the butter baste the chicken.
In a separate pot cook the rice until tender.
Once the chicken is done remove from the skillet and let sit for five minutes. Cut into bite size pieces.
In the same skillet pan add the cream of chicken, milk, cheese and spices then stir.
Add in the rice and broccoli and combine.
Top with the chicken and a little more cheese then let sit for five minutes.

Serve and enjoy! 😊

Comment "Grater" to snag your own to make dinner extra easy and cozy with these Au Gratin Potatoes. They are cheesy, creamy and tender. The perfect side dish for the holidays or for any week night dinner. 🍽️

Recipe 👇
2-3 lbs of peeled and rinsed potatoes
1 - 8 oz Tillamook extra sharp white cheddar cheese
1.5 cups heavy cream
1.5 cups milk
6 cloves of garlic chopped
2 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste

Thinly slice potatoes. I use this fun and easy rotary grater the link is attached to this post. It’s a game changer!

Grate the full block of cheese
Mix together the heavy cream, milk, garlic cloves and garlic powder and Italian seasoning.
In an oiled baking dish add sliced potatoes standing up in rows until the dish is full. Add salt and pepper to the top.
Pour in the creamy milk mixture on top.
Crown with the cheese and cover with foil and bake at 375 for 60 minutes.
Uncover the bake for an additional 15 minutes.
Remove from the oven and enjoy. 😉

Recipe 👇

Cheesy, crunchy and oh so delicious. Chicken Parmesan is always a hit for dinner. 🥘 Here’s the recipe below 👇

Chicken Parmesan:
1 large chicken breast, butterflied
1 cup of cooking oil
1/2 cup flour
1/2 cup Panko Bread Crumbs
1 large egg
2 cups penne noodles cooked til al dente
24 oz Hunts Garlic and Herb pasta sauce
Salt and pepper to taste
2 tsp Italian seasoning
2 tsp garlic powder
2 tsp onion powder
1 cup water
1 tbsp olive oil
Mozzarella cheese slices

Prep the chicken then dip into the flour first till coated, next the egg then the Panko. Place in a skillet pan with heated cooking oil.
Boil noodles with salt until al dented.

Once the chicken is cooked place some heated pasta sauce (add the seasonings and a tbsp of olive oil to enhance the flavor) to the bottom of a baking dish. Add the cooked chicken and slices of mozzarella cheese on top. Sprinkle some Parmesan cheese on top also.
Place in the oven at 400* for 15 minutes.
Mix the noodles with the remaining pastas sauce and let simmer and stirring occasionally while the chicken is in the oven.

Serve and enjoy! 😉

This loaded baked potato soup needs to be apart of your dinner line up this week! 🤤 It’s ready in under 30 minutes and hits the spot every time. Recipe is below 👇
Loaded baked potato soup:
5 large russet potatoes peeled, diced and boiled.
8 strips of bacon cooked but don’t over cook!
4 cloves of garlic minced
4 tbsp of butter
1/4 cup flour
1/2 cup diced chives (green onions)
3 cups mild or sharp cheddar cheese grated
2 cups chicken broth
1 cup milk
1 cup heavy cream
1 tsp Italian seasoning, garlic powder and onion powder with a dash of pepper.
In a pot boil you potatoes until soft
In a separate pot cook the bacon and leave the grease after cooking. Drain the bacon on a paper towel then chop into big chunks.
Once bacon is removed add in butter and garlic. Melt it then add in flour to make a roux.
Pour in the chicken stock, milk and heavy cream. Stir together with the seasonings.
Add in potatoes and bring to a slight boil. Gently mash the potatoes. But leave some small chunks for depth to the soup.
Let simmer for 5 minutes then serve.
Top with sour cream, cheese, bacon and chives.

The best meals involve cheese and a tortilla. 😋 These creamy chicken enchiladas are the perfect balance of sweet and spicy. The sauce alone is incredible. The recipe is below 👇

1 large chicken breast butterflied
6 soft taco tortillas
2 cups of cheddar or Colby jack shredded cheese
4 tbsp honey
4 tbsp lime juice
2 tsp of chilli powder
1 tsp garlic powder
1 cup heavy cream
16 oz Herdez Salsa Verde sauce

In a skillet with oil cook the chicken then shredded or chop.
While the chicken is cooking mix together in a bowl the honey, lime juice, chilli powder and garlic powder until honey is fully incorporated. Stir the shredded chicken and cover with plastic wrap. Set in fridge for 15 minutes to marinade.
Mix 1 cup of heavy cream with the Herdez salsa verde sauce until combined.
Pour a little in a 9x13 baking dish.
Assemble your enchiladas
Bake at 350* for 25 minutes.

Sometimes, I have no clue what I'm giving for gifts to family, friends, and neighbors 🙃. But this year I did the work, friend and got us covered! Jarred Brownie mix is simple and another gift that is delicious to give. ✨️🍫🎁

Here's what you need
1 cup flour
1/2 sugar
1 cup brown sugar
1 cup of cocoa powder
1 tsp salt
1 tsp baking powder

If you want to make a batch for yourself, just mix in 3 eggs, 1 cup melted butter, and 1tsp vanilla. Pour in a grease 9x13 pan and pop in a 350° oven for 25-30 min. 😉

Homemade holiday gifts are sincerely the best! Plus, a personal touch is always special. So, today, I'm sharing with you homemade caramel sauce. This is so simple to make, and it's dang delicious 😋

Here's what you need:
1 cup sugar
6 tbs unsalted butter
1/2 cup heavy cream

*First, pour the sugar in a sauce pan over medium heat.
*Stir until it turns copper, and all sugar is melted.
*Stop stirring and lower heat and place your butter in and stir gently until it's melted.
*Then slowly pour in your heavy cream while stirring.
* Take off the heat and pour in glass jars for use.
*Freeze until ready to use. Lasts in fridge for 2 weeks. To use just run under warm water to soften or place in a bowl of warm water.
