Nicole here with last week's top-of-the-hour recipe, Comfort Stew!

This is an easy crockpot dinner, that's also tasty and super filling.
Ingredients
1 Lb. of either a chuck roast or pork shoulder, cubed
1 can Campbell's golden mushroom soup
1-2 C. frozen mixed veggies
1-2 cubed potatoes (doesn't matter what kind)
Seasonings (Salt, pepper, garlic/onion powder, splash of Worcestershire sauce if you like, parsley flakes)

Directions
High for 4 hours or low for 8. That's it!

Hey neighbors, Nicole here with last week's top of the hour recipe!

Moose Fart cookie balls

Ingredients
1 Can sweetened condensed milk
¼ Cup melted butter
1 tsp vanilla extract
1 ½ Cups dried coconut
1 ½ Cups graham cracker crumbs, plus a little extra for folling
1 ½ Cups chocolate chips

Directions
In a large bowl, thoroughly combine the melted butter, sweetened condensed milk, and vanilla extract. Then add in the dry ingredients, stir in graham cracker crumbs, dried coconut, and chocolate chips until well combined.
Chill the mixture for about an hour to let it firm up. After about an hour in the fridge, scoop and roll mixture into 1 ¼ inch or so balls, try to keep them a little smaller because they are really rich. Roll the balls in the additional graham cracker crumbs to coat evenly then place them on a cookie sheet and place them in the refrigerator until they are firm. You can store these in a sealed container in the fridge for up to a week.

There you have a very rich, but super tasty desert that’s easy to make and take!

Last week's recipe was Merlot Filet Mignon

Ingredients
2 beef tenderloin steaks (8 ounces each)
3 tablespoons butter, divided
1 tablespoon olive oil
1 cup merlot
2 tablespoons heavy whipping cream
1/8 teaspoon salt

Directions
In a small skillet, cook steaks in 1 tablespoon butter and oil over medium heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 4-6 minutes on each side. Remove and keep warm.

In the same skillet, add wine, stirring to loosen browned bits from pan. Bring to a boil; cook until liquid is reduced to 1/4 cup. Add the cream, salt and remaining butter; bring to a boil. Cook and stir until slightly thickened and butter is melted, 1-2 minutes. Serve with steaks.

I serve with fresh mashed potatoes or even a nice homemade pasta and make just a little extra gravy.

Greek Sloppy Joes

Ingredients

1 pound lean ground beef (90% lean)
1 small red onion, chopped
2 garlic cloves, minced
1 can (15 ounces) tomato sauce
1 teaspoon dried oregano
Romaine leaves
6 kaiser rolls, split and toasted
1/2 cup crumbled feta cheese

Directions

In a large skillet, cook beef, onion and garlic over medium heat until beef is no longer pink, 6-8 minutes; crumble beef; drain. Stir in tomato sauce and oregano. Bring to a boil. Reduce heat; simmer, uncovered, until sauce is slightly thickened, 8-10 minutes, stirring occasionally.

Place romaine on roll bottoms; top with meat mixture. Sprinkle with feta cheese; replace tops.

The Top of the Hour recipe is French Onion Ground Beef and Rice Casserole.

Ingredients
1lb ground beef
1/2 to 1 tsp garlic salt
2 (10.5 oz) cans beef consume'
2 (10.5oz) cans french onion soup
3/4 cup water
2 Cups long grain white rice (uncooked and NOT minute rice)
3/4 cup butter cut into slices (this is about 1 1/2 sticks)

Directions
Preheat oven to 425. Spray a 9x13 baking dish.
In a skillet, brown ground beef, add garlic salt to season. Crumble beef while cooking. In the baking dish, add rice and top with drained ground beef. Pour in soup, consume', and water. Stir until well combined. Place pats of butter on top of the mixture, cover with foil and bake for 30 minutes. Remove foil and bake for another 30 minutes uncovered. Once it's done, fluff it with a fork and there you have an easy, savory dinner!
