Harvest season of carrot and Apple so we are doing carrot cake. Apple sauce sour taste is making balance the sweetness of the carrot cake that is why here in the house it is a good partner.
2 and 1/4 cup all purpose flour
1 and 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon powder
1/2 cup orange juice
4 cups grated carrot around 600gram
3-4 large eggs separated as meringue is folded to cake batter at the end
3/4 cup vegetable oil
1 cup sugar
Bake at 350F on preheated oven for 45 minutes to 1 hour just when the toothpick you insert comes out clean. My oven is not conventional.
For frosting in this cake we are not making a lot as we are trying to less eating sweet now as we are old already. Not like when we are in our 30's the more the frosting the better. But this frosting is really yummy so you double.
125 gram cream cheese, softened
2 tablespoon butter, softened
2 cups icing sugar
Need electric mixer for making this frosting. Just mix all 3 Ingredients and that's it.
Our Homemade Apple sauce, this is from the cortland Apple that is falling in our yard, no wasting of food you know. This cortland Apple really taste sweet n sour and that we like the taste. But in the picture is the store bought apple (spartan and ginger gold) as this apples are on sale so we buy and the one I cooked for apple sauce is from our backyard not really nice looking beautiful apples (I will make a video of what is the look of our backyard apples so organic).
5-6 apples peeled the skin, removed the core, slice and cook then pureed in hand blender.
