1 cup quinoa
2 cups water
1 zucchini, sliced
1 bell pepper, diced
1 red onion, sliced
1 cup cherry tomatoes, halved
1/2 cup feta cheese, crumbled
2 tbsp olive oil
Salt & pepper to taste
Fresh basil for garnish

-Rinse quinoa and cook it in water until fluffy.
-Grill zucchini, bell pepper, and red onion with a drizzle of olive oil, salt, and pepper.
-Combine cooked quinoa, grilled veggies, cherry tomatoes, and feta cheese in a large bowl.
