Comfort food season is here, and this Country Club Chicken Pot Pie from resident contributor Kathy Harrison is ready for the table! 🥧

Creamy chicken and vegetables come together beneath golden squares of puff pastry for a cozy meal that serves 4 to 6. Save this recipe for a comforting dinner at home! 🏡

Ingredients:
• 2 sheets defrosted puff pastry
• 1 egg
• 1 Tbsp water
• 1 Tbsp butter
• 1 Tbsp olive oil
• 4 carrots, sliced
• 4 stalks celery, sliced
• 1 large onion, diced
• 3 cloves garlic, minced
• 12 to 14 mushrooms, sliced, or 1 cup fresh peas
• 1 Tsp salt
• ½ Tsp black pepper
• 1 Tsp thyme
• 3 Tbsp flour
• 1 Tbsp butter for the roux
• 1½ to 2 cups chicken stock
• 1 cup heavy cream
• 3 cups cooked, diced chicken
