Crisp Baked Lobster: A Fusion of French Classic Freshness and Rich Aroma
Grilled lobster is a classic French dish that retains the freshness and original flavor of the lobster through simple grilling methods. Paired with herb butter or lemon butter, the grilled lobster has a slightly crispy exterior and a tender interior, making it a luxurious seafood dish suitable for special occasions.
Ingredients and Quantities
Fresh lobster: 1 piece (about 500 grams, halved)
🔸Butter: 3 tablespoons, softened
🔸Garlic: 2 cloves, minced
🔸Fresh parsley or cilantro: 1 tablespoon, minced
🔸Lemon: 1 piece, halved
🔸Olive oil: 1 tablespoon
🔸Salt, black pepper: to taste
🔸Fresh thyme or rosemary: a little (optional, for added aroma)
Cooking Tools
🔸Oven or grill
🔸Small bowl and mixer
🔸Brush
Preparation Steps
1. Prepare the lobster
Cut the lobster in half, remove the internal organs and clean thoroughly. Gently pat dry the surface of the lobster with kitchen paper towels. Sprinkle a small amount of salt and black pepper evenly on the meat side of the lobster to season in advance.
2. Make herb butter
Mix softened butter, garlic, minced parsley or cilantro, a little salt and black pepper in a small bowl, stir evenly. Add a small amount of thyme or rosemary according to personal preference.
3. Apply butter and preheat oven
Evenly spread the herb butter on the cut side of the lobster, ensuring each piece of lobster meat is covered with butter. Preheat the oven to 200°C, or prepare the grill, heating it to medium-high heat.
4. Grill the lobster
Place the lobster cut-side up on a baking tray or grill. Grill for about 10-12 minutes until the lobster meat turns white and becomes tender, with a slight browning on the surface (you can use the top heat function for the last 1-2 minutes to make the lobster surface slightly golden). If you prefer a richer flavor, you can apply another layer of butter during grilling.
5. Plate and garnish
Plate the grilled lobster, squeeze a few drops of lemon juice to add a fresh touch, and sprinkle some fresh parsley or cilantro as decoration. Place lemon slices beside it for additional acidity. Enjoy with French baguette, steamed vegetables or salad for a more flavorful experience.
Cooking Tips
🔸Freshness of lobster: Choose live lobsters to ensure tender meat. Avoid leaving the halved lobster for too long to prevent moisture loss.
🔸Applying butter: Herb butter enhances the flavor of the lobster. During grilling, the butter gradually seeps into the lobster meat, making it more tender.
🔸Control of grilling time: Lobster meat is delicate and should not be grilled for too long to maintain its tenderness and juiciness. It's ready when the cut side just turns white; do not overcook to avoid drying out the lobster.
Possible Issues and Solutions
🔸Dry lobster meat: Grilling time is too long. Shorten the grilling time and apply butter multiple times during the process to keep the meat tender.
🔸Insufficient intensity of butter flavor: Apply two layers of herb butter evenly on the lobster meat, or brush once again before turning off the heat.
🔸Uneven flavor: Pay attention to even distribution when applying butter to ensure every part of the lobster meat absorbs the herb flavor.
