Korean fried chicken street food 😋 inspired by a recipe from Seonkyoung Longest.
2 lbs Chicken thighs cut bit sized
3 cloved garlic minced
2 Tbsp mirin
4 beaten eggs
Dry:
2 cups of flour
1/2 cup of potato starch
garlic powder salt and pepper 1/4 teaspoon each
Mix mirin, garlic and chicken together
dredge chicken in dry ingredients then into eggs then back into dry ingredients.
fry until done
Sauce:
4 tsp of soy sauce
2 cloves of minced garlic
3 Tbls of Worcestershire sauce
2 Tbls agave necture
4 Tbls of ketchup
4 Tbls of gotchujang
3 Tbls of fruit jam (secret 😋 ingredient)
1 cup of water
Simmer until ingredients are well mixed
add a cornstarch slurry to thicken
pour over chicken and mix
add roasted sesame seeds

Marinade:
2 cups of soy sauce
1 teaspoon of sesame oil
5 minced garlic cloves
1 teaspoon of minced ginger
1/2 cup of pureed Asian pear
1/4 cup of rice wine
1 tablespoon of dark agave necture
2 sliced green onion
Marinate meat in marinade for 1 hour
Pan sear in cast iron pan

Dinner is served 😋 perfect for a burr 🌙 night! Butter beans, collards and hoe cakes!

1 lb of soaked Limas or canned butter beans
1 browned diced ham steak
4 cups of chicken broth
1/2 tsp garlic powder
1/4 onion powder
1/4 salt , pepper
1/4 cayenne
1/4 paprika
Simmer for 30 minutes and serve over rice

Easy Shepards pie
sautéed onions and garlic in avocado oil
1 lb ground beef cooked til brown
mix in 1 package mixed veggies
1 tbsp Westchester sauce
1 can diced tomatoes
salt pepper garlic powder
cook til warm and add into casserole dish
top with mashed potatoes
top with cheese and bake for 20 minutes at 350°
