Piri Piri chicken salad! Yum!

Roasted Piri Piri chicken! Yeah, I’m at it again. Another place, another chance to cook. I had enough Piri Piri left from my previous cook to marinate something, and that something was a whole chicken. 🐓

I spatchcocked the chicken and then let it marinate for a few hours while we were out exploring Keswick. The weather was cool and drizzly, so I knew it would be a perfect night for a nice hot, home cooked meal!

The chicken was served with a charred sweet potato and sautéed broccolini. M had a nice salad made before we realized we had no dressing. We made one with orange marmalade, oil, lime and herbs.

We both love eating out when we travel, (on holiday as it’s referred to here) and great food is part of how we pick spots, but sometimes having a home cooked meal on the road is just what you need!

Who says you can’t bring home with you?
