‘Aaj lunchbox mein kya hai?’ Episode 2 featuring One pot tomato rice & garlic pepper tofu ☺️✨

DETAILED RECIPE ⬇️

One Pot Tomato Rice:
- Heat 1 tbsp ghee & add 1 bay leaf, 2 tsp jeera, 1 tsp mustard seeds/rai, 2 sprigs of curry leaves, pounded ginger garlic (4-5 garlic cloves & 1/2 inch ginger), and 1 slit green chilli
- Let everything brown a bit
- Add 2 finely chopped tomatoes & season with salt, haldi, dhaniya powder, jeera powder, black pepper & a splash of water; mix & cook for 5-7 min till the tomatoes are mushy
- Add 1/2 cup soaked rice (a little less than 1/2 cup) & a pinch of sugar
- Roast for 4-5 min & add 1 cup water; let it come to a boil
- Cover & cook for 10-12 min till the rice is done
- Garnish with fresh coriander & it’s ready!

Garlic Pepper Tofu (tofu can be replaced with paneer):
- Pound 5-6 peppercorns & 8-10 garlic cloves coarsely
- Heat 1/2 tbsp ghee in a pan & add the paste to it
- Cook till slightly brown
- Add diced tofu/paneer & 4-5 cashews; season with salt, haldi & dhaniya powder and a splash of water
- Cook till golden brown and garnish with fresh coriander and its ready!

- Assemble your lunchbox with the tomato rice, garlic pepper tofu & sliced cucumbers and its ready!
