Lovely fresh risotto for dinner (slimming friendly adjust Parmesan &. Stock choice to fit you or plan)🙃
recipe: serves 4 generous portions
500g diced chicken,
350g risotto rice,
500ml chicken stock,
2x leeks,
3tsp chopped garlic,
1tsp dried tarragon (more if you like),
black pepper,
1tsp paprika,
1x JD Seasonings - Rubs & Meal kits. Pea & mint risotto pot,
handful of halved cherry tomato’s,
a handful of fresh thyme de-stalked,
Parmesan cheese to your taste (I used 2 handfuls) use 4tsps to make slimming friendly
Method:
Pour a little stock in a non stick pack, brown chicken until cooked through making sure pan doesn’t dry out, add tomato’s, rice, remaining stock, herbs & spices, spice pot & leeks, reduce heat to a medium temp and cook for around 20-25 mins stiring un rice is cooked (add more water if needed during cooking ) and the stock is absorbed, add Parmesan to taste (4tsps to make slimming friendly) & enjoy!!!
