Come and dine with my kids' lunch, one of their favorite meals:

Macaroni Chicken Delight

Ingredients:

- 1 packet macaroni
- 1 lb chicken
- 2 tomatoes
- 3 robot peppers (green, yellow, red)
- 1 onion
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp All-in-One spice
- 1 tsp Nyama choma BBQ spice
- 2 tbsp tomato paste
- Salt and pepper (to taste)
- Oil (for frying)
- ½ tsp Chili powder

Method:

1. Prepare Chicken: Boil with spices until fully cooked. Shred and set aside.

2. Cook Macaroni: Boil with 1/2 tsp turmeric. Drain and set aside.

3. Prepare Vegetables: Grate 2 tomatoes and 3 robot peppers. Chop 1 onion. Set aside.

4. Fry Onion and Tomato Mixture: Fry onion (3-4 min). Add tomato paste (2 min). Add grated mixture (2-3 min). Add spices.

5. Combine Chicken and Macaroni: Mix shredded chicken, water/stock, cooked macaroni. Simmer.

6. Serve: Garnish with chopped herbs or Chives.

Tips:

- Adjust spice levels.
- Use leftover vegetables/meats.
- Serve hot.

Custard Raisin Rolls Recipe 🍞️

Ingredients:
- 3½ cups all-purpose flour
- 2 teaspoons yeast
- ½ teaspoon salt
- 2 tablespoons margarine
- ¼ cup sugar
- 1½ cups warm milk
- 2 eggs (1 for egg wash)
- Raisins
- Custard:
- 4 tablespoons custard powder
- 4 tablespoons sugar
- 500ml whole milk

Method:
1. In a bowl, mix flour, yeast, sugar, and salt.
2. Add 1 egg and mix.
3. Add milk and mix until dough forms.
4. Place the dough on a floured surface and add 2 tablespoons of margarine, then knead for 10 minutes.
5. Cover and let rise for 1 hour.
6. Prepare custard:
- Mix custard powder, sugar, and milk.
- Cook on stove, stirring until thickened.
- Pour into a plate, cover with plastic wrap.
7. Roll out dough on a floured surface.
8. Spread custard and add raisins.
9. Roll dough, cut into 12 pieces.
10. Place in a greased baking pan, let rise for 20 minutes.
11. Egg wash tops.
12. Bake in a preheated oven at 180°C for 20-25 minutes.
13. Brush with melted margarine whiles still hot.

Roasted maize (also known as maputi or mhandire) - a delicious and traditional snack 😋😋

Roasted Maize (Maputi/Nhandire) Recipe

Ingredients:

- Maize (corn kernels)
- Salt
- Cooking oil (optional)

Method ;

1. Soak the maize in hot water for 15-20 minutes (optional).
2. Heat a pan over medium heat and add the maize.
3. Roast the maize until golden brown, stirring occasionally.
4. Add a little oil and salt to taste.
5. Mix well and roast for an additional 1-2 seconds.
6. Enjoy your roasted maize.

Alternative method:

- Roast the maize without soaking it in water.
- Mix a little water with salt, stir to dissolve, and then pour the saltwater mixture over the maize. Mix well to combine.

Butterfly Chicken recipe

Ingredients:
- 5 chicken drumsticks
- 1 cup all-purpose flour
- 2 tablespoons chicken spice (or less)
- Sweet chili sauce (for marinating)
- Chicken spice (for marinating)
- Water
- Cooking oil

Method ;

1. Butterfly cut the chicken drumsticks.
2. Marinate the drumsticks with sweet chili sauce and chicken spice for 30 minutes.
3. In a bowl, mix 1 cup of flour and 2 tablespoons of chicken spice.
4. Divide the flour mixture into two parts. Use one part to make a paste with water.
5. Coat the marinated chicken drumsticks with the flour paste, then dip in the remaining flour mixture.
6. Heat oil in a pan over medium heat and fry the coated chicken drumsticks until golden brown and fully cooked.

Coleslaw Recipe

Ingredients:

- Cabbage, shredded
- 1 apple, chopped (optional)
- 1 large carrot, grated
- 1 onion, chopped
- 1 tomato, seeded and thinly sliced
- Mayonnaise
- Salad sprinkle (seasoning)

Method ;

1. Shred the cabbage and set aside.
2. Seed the tomato and slice it thinly into strips, then chop.
3. Chop the onion.
4. Grate the carrot.
5. In a large bowl, combine the shredded cabbage, chopped onion, grated carrot, and chopped tomato.
6. Add mayonnaise and salad sprinkle.
7. Mix everything together.
8. Serve and enjoy

Vienna Bread Rolls (Pig in a Blanket)

Ingredients:

- 2½ cups of flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 teaspoons yeast
- 3 tablespoons cooking oil/melted butter/margarine
- 1¼ cup of lukewarm milk (start with 1 cup)
- 8 Viennas
- 1 egg for brushing (optional)

Method:

1. In a bowl, mix together flour, sugar, salt, and yeast.
2. Add milk and oil, then mix until combined.
3. Knead the dough for 5-10 minutes.
4. Cover and let rise for 1 hour.
5. Divide dough into 16 equal pieces.
6. Cut 8 Viennas in half to make 16 pieces.
7. Roll each dough piece into a long strip.
8. Wrap each strip around a Vienna, sealing the edges.
9. Preheat oven to 180°C (350°F).
10. Place rolls on a baking tray lined with parchment paper.
11. Cover and let rise for 8-10 minutes.
12. Brush tops with egg (or omit if you don't have one).
13. Bake for 18-20 minutes or until golden brown.
14. Brush with melted butter while still hot (if not using egg).

Tips:

- If brushing with egg, no need to brush with melted butter afterwards.

Lunchtime Savior Alert 🍲👌 What's for lunch today? 🤔 I've got you covered! 😋 Introducing my super simple and mouth-watering Chicken Stew Recipe 🍲👌

Ingredients:

- Chicken pieces (your choice of cuts)
- Chicken spice
- Turmeric
- Chicken stock cube
- Salt
- Oil
- Onion
- Tomatoes (grated)

Method ;

1. Heat oil in a pan and fry the chicken until golden brown. Set aside.
2. In the same pan, fry onions until soft.
3. Add chicken spice and turmeric; fry for 1 minute.
4. Add grated tomatoes and chicken stock cube. Mix well.
5. Cook for 1-2 minutes.
6. Add back the fried chicken, pour in water, and cover.
7. Let it cook for 30 minutes or until the soup thickens and the chicken is fully cooked.
8. Season with salt to taste. Serve hot and enjoy 😋
